GRAPE VARIETY
Cabernet Sauvignon, Syrah and Grenache. On average, the vines are 45 years old.

SOIL
The grapes are grown in calcareous clay parcels for the Cabernet, and from more sandy soils for the Syrah.

HARVEST
Hand-picking at peak maturity, or even later.

VINIFICATION
The crop is 100% de-stemmed. It then macerates for approximately 30 days, in a small concrete vat, regularly punching the cap.

MATURING
14 to 16 months long, in oak barrels. The wine is neither fined nor filtered.

TASTING
Colour : deep and concentrated colour.
Nose :animal, macerated fruits, sweet, harmonious and heady.
Palate : straightforward, portent of volume and flesh. Presence of imposing tannins. This generous wine will develop into fineness, for at least ten years.
Food matching : in its early years, this wine easily goes with loin of lamb. After a few years of ageing, it will perfectly fit any game.
