The Eagle Series shiraz has been made using traditional French Burgundy winemaking techniques, incorporating whole berry and whole bunch fermentation, extended skin contact and maximum lees contact. The wine is a super concentration of unique aromas and flavours only achieved using these non conventional winemaking techniques. After two years in small French oak barriques the Eagle Series shiraz has picked up many complex fine tannins, intergrated with superb Dalwhinnie hand-picked fruit.

Full dark brick red colour. The nose displays alluring lifted cherry fruit combined with savoury smoky delicatessen aromas and exotic five spice. A very intriguing wine, the fruit dances on the palate displaying fresh mature shiraz fruit, very fine tannins and a dry balanced finish. The wine is extremely elegant. This is only the third Eagle Series to be made by David Jones at Dalwhinnie and epitomizes a great wine in the true Australian tradition. Optimum drinking 10 - 15 years. Only 360 cases were produced.
