Grape Varieties: 100% Sagrantino
Region: The vineyards are located near the Commune of Bevagna, Arquata in the Montelfalco zone in the central region of Umbria.
Vinification: The grapes are hand picked in late October and left to dry naturally on racks for two months. This increases the sugar concentration. Fermentation occurs on the skins in stainless steel at a constant temperature of approximately 18°C. During this time the skins are stirred twice daily for five minutes for the first couple of days and then once a day for the final phase. Fermentation is stopped leaving residual sugar present in the wine. Before bottling it is aged in oak for 28 months.
Characteristics: Deep red in colour with a rich sweet sultana nose. An extremely complex palate of fruit, oak and the oxidative handling used in vinification. Sweet but tart fruits like raspberries and black berries are prominent on the palate.
Serve: at 16° C
Try it with: Aged Parmigiano Reggiano and with friends after dinner for conversation.
