Grape Varieties: 40% Cabernet Sauvignon and Cabernet Franc, 35% Merlot and 25% Barbera.
Region: The vineyards are located near the Commune of Bevagna, Arquata in the Montefalco zone in the central region of Umbria.
Vinification: The grapes are hand harvested at different times due to the different varieties. Fermentation occurs on the skins at a controlled temperature of 30°C for approximately 22 days. During this time the skins are stirred twice a day for 15 minutes for the first few days and then once a day for the final phase. The wine will spend 20 months in oak casks before being bottled for release.
Characteristics: A dry, full bodied red with a vinous bouquet and a well integrated amount of tannin.
Serve: at room temperature and decant if possible.
Try it with: Red meat dishes and hearty pasta dishes.
