The very first Octavius was made in 1988 and was produced from Coonawarra Cabernet Sauvignon. All subsequent further releases were produced from old vine Barossa Shiraz. Right from the outset the Octavius was made using old air dried American oak. In fact, the Octaves are made from oak that has been air drying for 8 years. Oak dried in this way produces more subtle and creamy characteristics than oak which is forced dried. The wine was matured in 70% new American oak octaves, whilst the balance is in one and two year old wood.The 1995 vintage was difficult with crops reduced significantly as there was little water. However, it was the old deep rooted vines that could withstand these drought conditions.Opaque crimson colour. Rich ripe stewed fruit, raisin cake and toasted oak nose, perfumed and just a sensational sniff with marzipan start! The middle palate is equally impressive with its voluptuous fruit flavours. Spice, liquorice allsorts, chocolate and coffee flavours fill the mouth. Classic old vines Barossa Shiraz. Perfect balance followed by long soft, fine grained tannins and a very long persistent aftertaste. Cellar 5-8 years.
