Region: From the vineyard of Castello in the commune of Grinzane Cavour in the north west region of Piemonte.
Characteristics: Cherry red in colour with orange highlights. A lasting bouquet that blends over the years to incorporate maturity, oak and fruit. The flavour is complex although remaining elegant and long lasting.
Serve: 18ºC and decant with care.
Try With: Pappardelle and smoked lamb Ragu with tomato and rosemary.
