In Champagne, only exceptional years are vintage years. Moet & Chandon's team is continuously searching to understand and read the vintage in order to interpret it, and improve it. They chose from over twenty vineyards to blend this cuvee.In 1993, after a season marked by early flowering, budding was premature, and the spring hot and thundery. Flowering was quick, and was finished by the second fortnight of June. The summer was exceptional, both for its sunniness, and its dryness, up until the beginning of the grape harvest on September 10th The late arrival of the rain did not affect the quality of the harvest. The wines are refined, clear, and expressive.Made from a blend of 30% Chardonnay, 50% Pinot Noir and 20% Pinot Meunier. Medium gold colour. The nose displays aromas of hazel nut and coffee combining with the blond shades of lime and ripe wheat. On the palate there is a wonderful balance built around delicacy and sparkle. Lingering, persistent flavour is intense and persuasive.Food Pairing: Large fish such as turbot and bass, seasoned with sophisticated spices, accompanied by cream of mushrooms and almonds. White fowl, like a fattened pullet or capon. Calf s sweetbread. Nut and peach based deserts.
