Sullivans Cove Single Cask TD0101 American Oak Second Fill 17 Year Old Single Malt Australian Whisky (700ml)

In the American Oak Second Fill range, Sullivans Cove offer whiskies of maturity and finesse, drawn from casks seasoned by earlier spirit. Decades of slow ageing in these gentler barrels creates a delicate balance between vibrant fruit and malt character, soft vanilla, and mellow oak spice. In this example the nose needs coaxing to release a fruity aspect, in particular, dried pears, perfectly integrated with the oaky vanillas. The crisp, warming delivery shows a bit of that pickled ginger note that characterised early bottlings, but it's offset by a soft orchard fruitiness, almost like a young Calvados. The finish is subtle, medium-long, with gentle spices. Reveals the distillery's elegant side. 15ml sample.

TD0101 was filled into a cask in May 2006 and bottled in June 2023 at 47.5% Alc./Vol. 384 bottles produced.
