Sullivans Cove Double Cask Barrel DC117 Single Malt Australian Whisky (700ml)

'Double Cask' is matured in Bourbon and French oak barrels. The style can vary over time. In this batch, the nose is rich and giving with cereals, Granita biscuits, poached pear and chocolate. Those notes don't quite follow through on the palate where the fruits are slightly sour and less obvious, the mouthfeel sharper. There's a rusticity here recalling the distillery's early period, and plenty of warm spices pushing through the finish. For perspective, another batch showed better balance and more fruit (add a point or two), so take these notes as indicative only. 50.1% Alc./Vol.
