French Oak ex-Apera Single Cask TD0821 was distilled in November of 2015 and decanted in November of 2025, maturing at 10 years old and yielding 367 bottles at 47.6% ABV. The style embodies the coming together of Sullivans Cove and Australia’s powerhouse fortified wine industry, unfolding layers of bright, sticky fruits intertwined with herbal lifts and the rich, distinctive spice of French oak. Non chill filtered.
Notes from the producers... Palate: Full-bodied and enveloping, with a luscious, fruit-forward character. Ripe blackberry and cherry compote lead into poached pear, dried apricot and quince paste. Layers of dates and prunes bring depth, complemented by warming oak spices - nutmeg, cinnamon and allspice. Hints of gingerbread and dark malt add complexity, while a gentle dryness provides structure and balance to the whisky’s generous sweetness. Finish: Long, silky and indulgent. Lingering notes of cola, espresso and dark chocolate give way to liquorice and spiced wine. A rich, dessert-like character unfolds - tiramisu, condensed milk and dried fruits - wrapped in a velvety texture. The influence of fortified wine cask maturation remains evident throughout, delivering a deeply satisfying and moreish conclusion.
