Rather than chasing overt wine influence, at Sullivan's Cove, each cask is chosen for its ability to complement and elevate the whisky's character over time - particularly true of French oak ex-white wine casks which are inherently challenging in the Australian context. High in tannin and structure, they demand both resilience from the spirit and careful, ongoing management in the bond store. Less a stylistic flourish, more of a considered exploration of structure, balance, and longevity, the result is a range of malts that continues to set a benchmark, demonstrating that with the right approach, wine casks can produce whiskies of remarkable depth, precision and enduring character. That was affirmed by another similar batch being awarded "World's Best Single Cask Single Malt" at the 2026 World Whiskies Awards in London.
