The backbone of this gin is a combination of familiar London Dry botanicals, complexed by native notes from strawberry gum, saltbush, muntries and pepperberry. Powerful aromas, strong on lemon sorbet and finger limes build to piney-juniper, coriander and cardamom. A wonderful gingery vibe makes the palate feel bigger than 43%, filling out with citrus zest and fresh juniper, coriander seed and peppery heat, followed by hints of cardamom, juniper and herbal teas in a dryish, slightly chalky fade. From start to finish, a gin that's nicely integrated, vivacious and cleverly composed. Also vegan, celiac and nut-allergy friendly.
