Red Mill Spiced Rum (700ml)

Made by blending a base rum from ex-wine casks (Pinot Noir, Chardonnay, Bordeaux, Sherry) with a smaller proportion from ex-Whiskey casks, Red Mill then top it off with a 4/1 ratio of their house Coconut Rum. The final blend undergoes a gentle maceration of tasty elements, including Cinnamon, All Spice, Pineapple, Cacao, Vanilla and Hibiscus. An exemplar of purity and restraint for the Spiced category, this take a leaf out of the distillery's 'Classic'. Supple and never too sweet, unfolding with suggestions of banana cake and dried pineapple, laced with vanilla and ginger; there's also hints of Bounty bar, a flash of muscat, with cinnamon and gingerbread warming up the lengthy finish.
