First bottled in 1933, Red Mill Rum is now entirely new again thanks to the founder’s great-grandson. The brand was trademarked by George "Bunny" Fesq and originally sourced casked rums from the CSR refinery and distillery in Pyrmont. David Fesq's contemporary expressions started offsite using borrowed equipment. Considered a great success, these were barreled in the Spring of 2021. Fesq now produces rums in Sydney. Red Mill has a special approach to elevage: Alongside a traditional bourbon barrel program are more exotic casks that previously held some of the world’s great wines and spirits, including Sauternes, Cognac, various Whiskies, Madeira, Sherries, plus dry red & white wines. There are barrels ranging from 125L to 1600L in size, their contents blended into regular bottlings and rare special expressions. The distillery's primary ingredient, molasses, is sourced from the Harwood Mill in the Northern Rivers of NSW, with the rums distilled in both pot & column stills.

Red Mill's 'Original' is an ode to the history of both Red Mill and Sydney Harbour as a rum capital. Though not intended as a replica, Fesq has used the historic original as a reference point. His version has the stronger, punchier flavours of white oak cask rums, but with the refinement and elegance of all of the Red Mill spirits. The rum is batch blended from 75% ex-Bourbon and 25% ex-Scotch Whisky barrels (American oak), before resting for three months in a 1000L French oak foudre. The resulting rum remains on the savoury-dry side, so it’s a bit more elegant than most. The presentation is a modern interpretation of the bottles that existed in the 1960s, replete with a retro gold square label. 45% Alc./Vol.
