Red Mill Classic Gold Rum (700ml)

Red Mill's 'Classic' is matured in approximately 50% ex-whiskey casks (Bourbon, Scotch and mixed Quarter Casks) and 50% ex-wine casks (Australian Pinot Noir and Red Bordeaux), then settled in a custom 1000L Foudre cask for six weeks before bottling. The light body suggests a column still component is at the fore, the profile crisp and fresh with light cola and low-key fruitiness, finished by a deft sprinkling of molasses cake, allspice and gingery warmth. Never quite sweet, despite its lightness, there's a sense of elegance and nuance that keeps you coming back. Better than a simple mixer, this welcome departure from mainstream sweetened rums could even work as a stand-in for a summer-time single malt. 40% Alc./Vol. No added sugar.
