
Legendario Domingo Classico Espadin Mezcal (700ml)
Made in the village of San Luis del Rio by the Velasco family, this relatively new Mezcal brand was founded in 2012 and aims to highlight different mezcal-producing terroirs. The distillation tradition from each varies, but each captures the agave varietal character and mouthfeel that wild fermentation and artisanal production afford. The label centres around Sundays (domingos) as an opportunity for celebrating traditions, festivities and mixing reality with fantasy. The joy of each region makes an ordinary Sunday into a Legendary Sunday (Legendario Domingo).
For the Classico expression, Espadín magueys are harvested at 8 to 9 years of age, cooked underground in conical ovens with river stones and dead wood. Milling is via a Tahona and horse followed by natural fermentation in wooden vats using indigenous yeast and a double distillation in a copper pot still. The final spirit is cut back with well water to 42% Alc./Vol. Recommended for sipping or making beautiful margaritas, the overall balance of Domingo's Classico makes it the best place to start for beginners.
