Kilchoman Genesis Harvest S2 Single Malt Scotch Whisky (700ml)

The second bottling in Kilchoman’s ‘Genesis’ series was reportedly a collaboration with German importer, Hanseatische Weinhandelsgesellschaft Bremen. The concept is to follow Kilchoman’s whisky all the way from barley to bottle, with releases corresponding to each stage of the journey. In total, there are to be eight different expressions. This bottling is dedicated to ‘Stage 2 – Malting’. Appropriate, as Kilchoman is known for being a farm distillery, and is one the few remaining that floor-malts and distils barley grown onsite. Most now outsource the process. Aged in 75% Bourbon casks, 5% Oloroso Sherry casks and 20% Sauternes wine casks, three different kinds of barley are included in the mix: Concerto from the Port Ellen Maltings, Concerto from Kilchoman’s own maltings, and Laureate malt, also produced on-site. The end result is a dram offering notes of ashy peat, tobacco leaves, vanilla, peaches, white grapes, lemon rind, subtle dried fruits, gingerbread, burnt oak, dark chocolate and green apples. A genuine limited run of just 4,200 bottles, each bottle comes boxed with an insert explaining the malting process. 49.2% Alc./Vol. Non chill filtered. Very limited stocks.
