Kilchoman 100% Islay 11th Edition Single Malt Scotch Whisky (700ml)

Kilchoman's 100% Islay label represents Scotland's only single farm single malt whisky. The 11th edition was matured in twenty six bourbon barrels and seven Oloroso sherry butts for a minimum of nine years. Founder, Anthony Wills, comments, “My preference when using wine casks has always been to use fresh first fill barrels with a view to bottling the whisky relatively young. This approach means the lighter, clean flavours and fresh maritime peat smoke aren’t overwhelmed by the cask influence.” The result is consistent with previous bottlings, managing to capture a kaleidoscope of Islay in a deceptively straightforward package - the aromas harmonising ocean breeze with hints of smoked meats, medicine chest, white pepper and citrus as well as something vaguely herbal. Predictably seamless, Kilchoman's sweet, creamy malt effortlessly combines salt and citrus with nutty sherry, trace iodine, spent candle wax and coastal peat reek. Peppery warmth and chimney soot linger in the medium long, ashy finish. Peated to 20ppm, 12,000 are available globally. 50% Alc./Vol. Non chill filtered.
