Sotol is the northern cousin to Tequila and Mezcal. Made from the so called "Desert Spoon" plant ('sotol' in Spanish), found in the Chihuahua desert and further north in New Mexico and Texas, this prickly evergreen can take between 12 and 15 years to mature, at which point, just like Tequila, it’s harvested, the heart is cooked and the juice is fermented and distilled with some expressions barrel aged. In international markets at present, 'Hacienda de Chihuahua' is one of the most prominent brands .

Tasting note: Very pale straw colour, this barrel aged version offers butter menthol lozenge and dilute beeswax aromas; almost water like in the mouth with subdued smokey agave / sap-like flavours and featherweight spices at the finish; beeswax and white pepper aftertaste. 38% Alc./Vol.
