The name Clase Azul, meaning 'blue class', was inspired by the blue agaves used to make their spirits. This is probably the most unusual product in their line up - a blend that melds Clase Azul Plata with a special Reposado matured in French oak, and an Extra Añejo aged in x Bourbon barrels. The final combination is finished in Pedro Ximénez (sweet) sherry casks. It's also one of the most sleek and silky, which will no doubt put some traditionalists off. At times, the profile seems to almost wander into rum territory, the agave so delicately expressed you might fail to notice it amidst the sweet oak. You have to dig deep to appreciate the subtleties here, the agave being low-key, merely hinting at roasted green capsicums, dill pickle, white pepper and tobacco, gathering more traditional tequila vibrancy after air contact. It's a remarkably finessed, elegant, soft expression of the spirit, best reserved for standalone sipping. Alternatively, the producers suggest matching it with brie, tangerines or white chocolate. 40% Alc./Vol.

Notes from the producers... Toasted wood, agave nectar, orange peel, almond and hints of fresh fig, raisin and walnut. Cooked agave, almond and fig marmalade with a long finish of cacao and dried plum. The Clas Azul brand can be instantly recognised by their stunning decanters. Tradición Mazahua, founded in 2007, is a ceramic workshop where artisans dedicate themselves to creating the vessels as a tribute to Mexican culture. In this example, the ceramic base is adorned by two hand painted 24-karat gold ribbons, while the glass is inspired by the spectacular incandescence of Mexican sunsets.
