German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard. Vines are often close-planted, and winemaking frequently utilises a generous use of whole bunch.

Timo sources his Syrah from a small portion of the Bloody Hill vineyard, and uses 100% whole bunch fermentation for his trademark vivid, stalky aromatics. Intense and flavourful, with plentiful texture and tannin, balanced by fresh acidity.

Made with 100% whole bunches and matured in seasoned hogsheads. A saturated crimson purple. A seductive and slightly atypical Mayer shiraz. It's a touch riper than normal with its bouquet of dark cherry, blueberry and warm spices. A totally delicious and fruit-driven wine that will provide a heap of enjoyment over the next decade, if not longer. Drink 2026-2032.

Blue fruited, peppery, dashes of Aussie bush, some game meat notes. Supple texture, a fresh, transparent kind of texture with a sheath of light, lithe tannin. Juiciness inherent, pretty fruit characters, quite the stern, Italianate tannin coming mid palate through the finish, and lingers with a saline-pumice stone minerality. Fine wine paradigms. Drink 2026-2031.
