2022 Paralian Wines Spring Hills Cabernet Sauvignon
Matured in a mix of barriques, hogsheads and puncheons of which 23% were new for a period of 11 months. Dense black as night heart with a deep vibrant dark red black tinged hue. Red to black currant and mulberry aromas abound complimented by tobacco, dusty cedar, traces of black olive and bay leaf. Medium bodied and elegant, the palate features red currant and mulberry fruits which meld into a dusty cedar, tobacco and bay leaf back drop. Very fine grained tannin structure with a super refined graphite like finish.
Drink over the next 8-10 years.

This is a culture of precise tannin management and effusive energy, no matter the weight of any wine. This serves to compress the fruit into a whirl of tension and savouriness. This, an inaugural release, is no different. My gripe is the eucalyptus that strikes the currant, olive, violet and sage aromas to dry the finish. Slightly, mind you. There is a great deal to enjoy all the same, from the saline slake of Blewitt Springs freshness, ballbearing tannins, granular and gritty, and the saliva-sucking maritime feel. Drink by 2035.
