
2021 Denton Pinot Noir
Denton is owned and operated by father & son, John & Simon Denton. With their combined experience in architecture & hospitality, they established the property in 1996 and planted the vineyard between 1997 & 2004. The "View Hill" vineyard is situated in Yarra Glen on an isolated hill set over granitic sandy soil on a north-facing aspect. Luke Lambert has overseen winemaking since 2015, contributing his years of Yarra Valley experience making great Chardonnay & Pinot Noir.
Pinot Noir is grown on the very top of the North Eastern slope where it receives more gentle morning sunlight and does not see so much of the afternoon heat. The vineyard is planted at a very high density of 1.3m x 0.8m which contributes heaps of power and concentration. Wild fermented on skins (with a 60% Wholebunch inclusion) for 21 days with frequent plunging, the wine is then pressed to French Oak Puncheons (13% being new oak) for maturation. The 2021 growing season has resulted in a wine with heaps of bright, fresh red and black fruit, and floral aromas while supported by fine tannin and good structure from acidity.
