2021 Ad Hoc Cruel Mistress Pinot Noir

Sourced from the Pemberton region, the fruit for this Pinot was fermented using a combination of wild fermentation and selected yeasts. Maturation took place in 1-3 year old French oak barrels for 6 months.
Deep dark red core with black shaded edges and a bright red purple hue. Possessing a perfumed like quality the nose offers up scents of violets, dark cherries and ripe strawberries. Subtle forest floor, dried herb and spice notes are also evident. Perfectly ripe and savoury the palate has an expressive fruit profile of dark cherry and strawberry fruits which overlay a back drop of dried clove, forest floor and cedar. Supple mid palate feel with a spicy finish, velvet smooth tannins, good power and a deliciously ripe aftertaste.
Drink over the next 4-5 years.
