Fermented on skins and bunches for 2 weeks before being pressed to old hogsheads. Bright damask pink colour. Elevated pear and red apple skin aromas mix with dried herbs, quince and spice. The palate has a fresh slippery feel with red apple and quince flavours prevalent over light dried herb infusions and subtle blood orange. Finishes bone dry with tangy acidity and a light bitter orange aftertaste.
