2019 Terre a' Terre Crayeres Vineyard Sauvignon Blanc
Crowned in the 2022 Halliday Wine Companion as the Award Winner in the Sauvignon Blanc category.
Fermented in 600 litre French oak demi muids then aged for 8 months on full lees. Brilliant very pale straw, almost water like colour with a distinctive tinge of green around the outskirts. Pronounced tropical fruit, lime and green apple aromatics are married to fresh herb notes. Filling the mouth are intense passionfruit and spicy green apple fruits which are underpinned by infusions of fresh herbs and slatey mineral characters. Dry brisk finish with a long textured aftertaste.
Drink over the next 1-2 years.
Cold-settled for 2 months, a technique developed by Brian Croser, but rarely duplicated. Fermentation in used 600L demi-muids, then matured on full lees for 8 months. The result is very complex, but the fruit is undaunted, with layers of lemon curd, citrus and a whisper of honey. Drink by 2025.
