2017 Amrut Single Cask #8835 Australian Exclusive Ex-Madeira Cask 5 Year Old Single Malt Indian Whisky (700ml)

Single Cask No. 8835 is an Australian exclusive, hand picked by the importers. What intrigued them was not only the fantastic flavour profile, but the technique used to produce this totally unfiltered whisky. It involved decanting and allowing the liquid to settle for three days before calculating exactly how much water was required to cut the alcohol down to 60% ABV. Drip-fed over 36 hours into the whisky vat, not disturbing any sediment or oils, when complete, a slow syphon was used to fill the bottles. The resulting dram has all of its natural oils and lipids retained. At first taste, you'd be forgiven for thinking this was sherry-casked. The nose is weighty and dense with sponge cake and vanilla merging into ripe rum-like tropical fruits. On the palate, a quick nip and prickle gives way to a burst of sweet malt - the Jamaican rum feel repeating as papaya and semi-ripe banana, then cocoa, warming spices and drying oak. Not much left of the Madeira influence, besides perhaps a faint residual sweetness. Instead, this plump, sumptuous cask selection reflects the climate it was matured in. 60% Alc./Vol. Tasted from a 30ml sample.
