2017 Amrut Single Cask #8835 Australian Exclusive Ex-Madeira Cask 5 Year Old Single Malt Indian Whisky (700ml)

Single Cask No. 8835 is an Australian Exclusive, hand picked by the importers. What intrigued them about this cask was not only the fantastic flavour profile, but the technique used to produce this totally unfiltered whisky. It involved decanting the whisky and letting it settle for 3 days before calculating exactly how much water was required to cut the alcohol down to 60% ABV. Water was slowly drip-fed over 36 hours into the vat, not disturbing any sediment or oils. When complete, a slow syphon was used to fill the bottles from the top of the vat and into the bottles, all the time checking that the ABV was correct and the liquid in the bottles remained as pure as possible. The resulting whisky has all of its natural oils and lipids which are commonly lost or greatly reduced in a filtration process. This leaves us with a delightful full-flavoured, full-textured whisky. As close as can be to its last days in the cask!
