100% whole-bunch fermentation with maturation taking place in old oak for 9 months Deep straw colour with a pale straw hue. Herbaceous grassy top notes intermix with asparagus, dried herbs, citrus, faint honeyed notes and spicy pencil shavings. Rich and textured the palate is filled with herbaceous grassy asparagus characters, subtle dried honey, ripe citrus, dried herbs and spicy cedar. Dry finish with sufficient acidity. Aftertaste of grassy asparagus characters, dried herbs, ripe citrus, subtle dried honey and spicy cedar. A rich textured style with lots of grassy dried herbs characters running through it that some may find too much.
