The 2015 Dalrymple Sauvignon Blanc was sourced from three very distinctive sites across Tasmania. The Coal River Valley, near Hobart, and the Relbia area of the Tamar Valley provided the majority of the fruit along with a smaller parcel from Dalrymple's own vineyard at Pipers River. To maximise complexity each parcel of fruit was harvested and fermented separately with a range of yeast strains and lees contact. A small portion was fermented in old French oak barriques to add texture.

Brilliant water like colour with a greenish tinge around the outskirts and a watery hue. Lifted herbaceous gooseberry aromas are intermixed with some grassy citrus like characters, asparagus and faint hints of capsicum. Delightfully fresh and lively the palate features mouth watering flavours of gooseberries interplaying with herbaceous grassy characters, citrus, asparagus and spicy fresh herbs. Excellent concentration and length. Clean dry finish with crisp acidity and a long aftertaste of herbaceous gooseberry, grassy asparagus, citrus and fresh herbs.
