The quality of the wines made at Dominique Porter – now made by Ben Portet – is really on the march.
This is the way to serve Heathcote shiraz. Ripe and fruit-filled but threaded with cool herbs and cracks of pepper spice. Earthen even, a little. As much a water colour as an oil painting. Refreshing. And yet not wanting for flavour. Finesse is the word I’m looking for. It has it in spades. Drink 2016 - 2028.
