Wild Duck Creek’s Shiraz Pressings is created by separating the final two buckets of wine out of each press-load and pouring them into new French and American oak hogsheads. Usually blended back into the standard Springflat Shiraz, it is only in very special years, when the Springflat Shiraz free-run has an abundance of natural tannin, that the Shiraz Pressings is bottled separately.

Impressively coloured for its age the wine displays an impenetrable midnight black core and a deep dark red black tinged hue. Potent aromas of blackberry and liquorice sail out of the glass with ripe dark plum, vanillin oak, subtle earthy leather notes and spice also present. Full and very rich the palate boasts a lavish profile of ripe blackberry, liquorice, black cherry and black plum flavours which are carried by toasty vanillin oak and earth. Opulent mouthfeel and velvety tannins with traces of spicy leather on the finish. Long powerful blackberry, black plum, liquorice, vanillin oak, scorched earth, subtle leather and spice aftertaste.

The 2005 Shiraz “Springflat” was aged for 18 months in 50% new French oak with the balance equal portions of seasoned French and American oak. It emits an alluring bouquet of cedar, saddle leather, boysenberry, mulberry, blackberry, and blueberry compote. Opulent, layered, with tons of flavor nicely concealing a blanket of ripe tannins, this superb Shiraz will evolve for 6-8 years and drink well through 2025. The 2005 Shiraz “Springflat Pressings” is similarly styled but slightly more dense and packed than the Springflat. It should offer slightly more aging potential. Drink 2013-2025.
