Something a little special here, and a complete departure from Andrew Symington's usual preference for nothing but the finest sherry casks. Amarone is an Italian red wine made from partially dried grapes - mainly Corvina - from the Valpolicella region in Veneto. The dehydration concentrates the fruit flavours making for a ripe, heavy wine with extra richness. This is not just a finish but a full-term maturation, with a series of first-fill Amarone hogsheads sourced from Dal Forno Romano. The result is a stunning fusion of whisky, wood and wine, bringing together the distillery’s oily, characterful spirit with the exuberance of one of Italy’s finest. Categorised as a dessert malt and an immense dram, expect a decadent profile that features notes of dark cherry, chocolate, espresso, leather, and spices. Given some time in a snifter reveals its full potential. Water, if at all, is recommended sparingly. 1,510 bottles were bottled from casks 1001 - 1005 at 50.8% Alc./Vol. Non chill filtered.
