Tim Knappstein has produced a very fine, restrained Chardonnay, that needs 4-5 years to fully blossom. Matured in new French Oak and kept on lees for 9months.
Bright straw colour. The nose is restrained with aromas of butterscotch, yeast lees and cashews. The palate is more accessible, with flavours of fig, melon, nut, citrus and yeast lees, over a toasted oak background. The structure is tight knit with good levels of acidity and simply requiring some patience.
