Further to his pursuit of perfection, since 2008, Gaffy commenced a classification regime dividing his wines into three different labels: 'Foris' for the entry level, 'Principia' for the middle tier and 'Altior' meaning 'even higher' in Latin, for his top wines. The barrels are classed prior to bottling, and in some years wines may be completely declassified to maintain the highest possible standards.

Semi translucent dark crimson red colour with light dark red hue. Top notes of dark cherries are followed by a faint hint of stalk, some gamey cedar and spice. Light to medium weight the palate possesses greater richness and more of a textured mouthfeel than the standard Principia Pinot Noir. Mouthfilling flavours of ripe dark cherries, plum, some gaminess and spicy cedar. Velvet smooth tannins. Excellent power wave with long ripe dark cherry, plum, gamey cedar and spice aftertaste.
Drink over the next 3-4 years (2013-2017).
Alc 13.9%
