Located halfway between Tokyo and Osaka, Houraisen is situated in the Aichi prefecture and they own about 20 ha of their own rice paddocks. The brewery sits in the mountains at around 500m above sea level, and the water source available to Houraisen is some of the softest water in Japan. Having no magnesium or calcium in the water means the sake they produce is very 'soft'.

Tasting note: Brilliant pale lemon colour. Elegant nose of light tropical fruit, green melon and honeysuckle, along with hints of vanilla bean and cream. It's delicate on the palate with fruit quite subdued, showing more dairy and sweet vanilla notes, white chocolate and earthy mushroom. With time more guava and papaya fruit emerges, while the finish has a touch of pithy grip. A well weighted and food friendly style with a dry finish. Serve room temperature or warm.
