The wine takes its name from Maxwell’s 60 metre long man-made cave which was dug into the solid limestone hill in 1916 to grow mushrooms. Above this cave, on the crest of the hill, there are 19 rows of “Reynella Selection” Cabernet Sauvignon vines. Planted in 1972, these vines originate from those brought into South Australia by John Reynell over 150 years ago.
Matured for 24 months in a mixture of new and old French oak. Impenetrable inky black in colour with a deep dark red black hue. Jumping out of the glass are scents of blackcurrant followed by some mulberry, cedary tobacco characters, dried herbs, dark chocolate and spice. Full, rich and structured the palate is awash with lush blackcurrant fruit which sits over a back drop of mulberry, cedary tobacco characters, earthy black olives and bay leaf. A firm, robust tannin framework leads into a long aftertaste that shows plenty of definition.
