Principia was founded in 1995 by Darrin Gaffy. A passionate, intelligent, quirky winemaker and vigneron, Gaffy allows terroir to shine through his wines through hand-picking of the vineyard, wild yeast fermentation and vinification without the aid of any pumps or machinery. Gaffy also believes in a long time on skins to give the wine structure and a savoury feel. Maturation takes place in French oak for 18 months of which 25-30% was new.

Displays good depth of colour with a bright dark red core, black tinged edges and a vibrant light red hue. Excellent aromatics with perfumed scents of violets intermixing with ripe dark cherries and strawberries shaded by hints of anise, faint dried herbs, subtle notions of forest floor and spicy cedar. Light in body with a fresh supple feel the palate is elegantly decorated with ripe red cherry, winter strawberry and a dash of sour cherry flavours which hold sway over a back drop of subtle stalky cedar, traces of anise, dried herbs and spice. Finishes with a lick of bright acidity. Velvet smooth tannins. Excellent length with a long savoury ripe red cherry, winter strawberry, hint of sour cherry, subtle stalky dried herbs and spicy cedar aftertaste.
Cellar 5-6 years.
