The 2014 Dalrymple Sauvignon Blanc was sourced from 3 very distinctive sites across Tasmania. The Coal River Valley, near Hobart and the Relbia area of the Tamar Valley provided the majority of the fruit along with a smaller parcel from Dalrymple’s own vineyard at Pipers River. To maximise complexity each parcel of fruit was harvested and fermented separately with a range of yeast strains and lees contact. A small portion was fermented in old French oak barriques to add texture.

Brilliant water like colour with a light but distinctive greenish tinge around the edges and a watery hue. The nose displays an intense aromatic profile of herbaceous gooseberries, grassy asparagus, some capsicum and citrus. Lively and concentrated in flavour the palate features herbaceous grassy gooseberry characters, green apple, fresh asparagus, citrus and a touch of spice. Good textural feel with a dry crisp acid finish. Long refreshing conclusion of herbaceous grassy gooseberries, fresh asparagus and citrus.
