Winemaker Peter Bissell has employed a number of different techniques to maximise this wines flavour concentration, complexity and textural qualities. These include Barrel fermentation on solids in new (30%) and one year old Seguin Moreau Chagny barriques, with 20% of the ferments conducted using wild yeast and the balance with AWRI 1375 yeast, as well as lees contact for eleven months.

An excellent fuller style of Coonawarra Chardonnay.

Brilliant very pale straw colour with watery hue. The nose displays lifted notes of toast, white peach and cashew followed by some nougat and spice end notes. Mouthfilling, creamy and quite rich the palate delivers flavours of white peach, nougat, cashew, toast and spice. Medium weight with a clean dry finish. Excellent length with long aftertaste of nougat, white peach, toast and cinnamon spice.
