The development of Sabotage Wines over the next few years will be worth watching, as the lads evolve their style of winemaking. At the moment the influence is distinctly French, we think that some backing off the secondary flavours will help by allowing more primary fruit to express itself. Very deep crimson colour with deep crimson hue – an impressive start. Aroma of strawberry and black cherry followed by a gamey endnote. The palate has good weight, but only a moderate power wave. The tannin structure is fine, but drier than those of it’s Australian peers. Flavours of black cherry and spice. Aftertaste of black cherry, strawberry and spice.
