Wine Education

Vintage School 1.3 - Taste Categories: Myths & Modern Research

The new model of taste continues to emerge - this chapter has been updated with recent research regarding the fifth basic taste 'Umami", and more detailed information on Trigeminal Flavours also referred to as "Mouthfeel" Sensations.

Vintage School 2.13 - Barrel Maturation & Wine Flavour

Originally wine was stored in barrels purely because they were robust and manageable storage vessels. Nowadays, it's recognised that many wines are uniquely enhanced by exposure to oak. So much so that the oak barrel is generally considered the most important element of many wines and spirits next to the source of the raw liquid itself. This chapter examines how and why barrel maturation influences a wine's flavour.

Temperance or Indulgence?

This brief article looks at wine in still life paintings from the Dutch Golden Age. In particular, it explains the artistic and symbolic role of wine for the 17th-century Dutch masters and examines their dilemma over whether to portray it as a well-earned luxury or potentially ruinous substance.

How We Score the Wines

Introduction | Visit Winespider |

The tasting panel at Nicks Wine Merchants taste hundreds of wines each month. Some are good, few are excellent while many are bad or indifferent. How do we arrive at the scores we do? The rating system we use is by no means arbitrary, rather it is methodical, transparent and self policing.

2006 Nicholson River Chardonnay
A superb example of what Nicholson River does best – big, bold, beautifully voluptuous Chardonnay.
$39.99 each

2007 Nautilus Pinot Noir
This wine has all the hallmarks of great Pinot Noir.  The palate is quite joosy and is supported by velvet smooth tannins – and what’s more, there is a very impressive power wave.  Very long aftertaste with the power wave persisting. Exceptional value.
$34.99 each

Wine Preserva Kit
The 'Wine Preserva' is a new Australian invention for keeping wine. It is a simple inert plastic floating disk that comes with a tong to push the disc into the top of the bottle. The inert plastic disk floats on top of the wine and moves down as each glass is poured essentially forming a blanket that prevents oxidation.  It keeps wine fresh for 5-7 days after opening.
$4.99 per pack
