Yalumba have always been in the lead with their sparkling wines, although in more recent years their presence has been somewhat eclipsed by the winemaking giants. None of the grapes used to make this wine are crushed, instead they are placed carefully in the press and squeezed gently to release only the clear Cuvee juice from the centre of each berry. The juice from each vineyard is fermented separately, allowing the character of each vineyard to be expressed. These base wines are then aged on their yeast lees. This ageing increases the complexity and texture of wines, and allows the flavours to reach their full potential. A blend of 70% Pinot Noir and 30% Chardonnay. The Pinot Noir is largely responsible for the wine's creamy texture, and the persistent fine bead of bubbles. The chardonnay contributes to the wines crisp lemon citrus flavours.The trick with this sparkling wine is to get the temperature right (just a bit below cellar temperature) - and a little care certainly repays handsomely - as it behaves more like still white in its flavour range. Pale straw colour. Fine profuse bead and delightful toasty nose. The palate displays finesse with considerable length and persistence. Toasty creamy flavour - with clean acid finish. Excellent value for money.
