Tasting Notes: The colour is light to medium straw with a green tinge. The bouquet is a complex balance of fresh fruit and creamy yeast development. On the palate, delicate mousse complements a medium bodied flavour and refined acidity. A delightful example of Australian sparkling wine.

Viticulture: Traditional Australian varieties,Chardonnay and Pinot Noir, were selected frompremium vineyards in South Australia andVictoria. The emphasis in fruit selection was toproduce a range of base wines reflecting aconstrained fruit flavour spectrum.

Vinification: Wolf Blass Chardonnay Pinot Noir ismade using traditional sparkling wine productionmethods. The base wines were vinified withelegance and freshness paramount. Extendedyeast lees contact (average 12 months Tirageage) and the addition of minor components ofthree years lees age add softness and complexityto the wine.
