There is both excellent volume and a seductive texture to the medium-bodied flavors that possess good power while exhibiting very fine length on the saline and attractively dry finale. Some patience should help to add depth. Drink through 2029+.

The palate is promising with good substance, fine acidity, and unlike some other cuvées, has good grip with more persistence on the finish. Very fine. Drink 2024-2035.

There is excellent underlying tension to the nicely concentrated medium-bodied flavors that possess both ample minerality and delineation on the balanced and lingering finish. This could also use better depth, but the underlying material appears more than up to the task and overall, it's one to consider. Drink through 2026+.

    Made up from top sites such as Bas de Chapelot, l’Araignée, plus some from Pargues. Olivier has made up an approximate blend for this sample, including a proportion made in barrel. Tête d’Or will be bottled with the 1ers Crus. Another pale colour. The wood infuses the bouquet without drowning the fruit. Good intensity here, definitely a step up from the straight Chablis, with a citrus point at the finish. Drink from 2024-2027.

Otherwise, there is excellent delineation to the markedly punchy and stony middleweight flavors that possess a cuts-like-a-knife, dry and linear finish.     It’s no big secret that the prices of Burgundy have skyrocketed in recent years and whilst the wines from Chablis haven’t risen quite as steeply it’s becoming increasingly difficult to even locate sub $50 Petit Chablis. So a $60 Premier Cru Chablis that delivers exceptional quality is indeed a rare find these days.
    Francis Boudin is the third-generation vigneron at Chantemerle and the estate firmly falls in the traditional mould - he despises oak. As the story goes, his grandfather was a cooper and with so much exposure to oak during his formative years he banished it from the family cellars opting for concrete and steel alone.
    Old vine material is the key to the estate’s success. While many in the region during the 1970's were re-planting vineyards to high-yielding material the Boudins were planting with naturally low-yielding vines. Along with careful vineyard management, an informed but gentle touch in the winery and judicious lees work to bring out flesh and texture, Boudin produces supple wines, that speak of place clearly layered with Chablis' prized minerality.

    A gorgeous Premier Cru Chablis that’s drinking superbly and delivers amazing value.

    Brilliant pale straw colour with yellow straw tinged edges and a watery hue. Showing plenty of intensity, seductive pear, lime and green to apple scents laced with wet stone, dried honey and oyster shell like notes evolve out of the glass. Possessing a river stone like textural feel, this gorgeous Chablis features rich, mouth filling pear, lime and dried honey flavours that envelope the palate. Lending further interest are wet slate, chalky mineral and oyster shell like characters. Excellent concentration and drive with fresh underlying acidity. Finishes long and pure. Proves there’s still value to be had in Chablis.
    Drink over the next 4-5 years.

The palate is well-balanced with yellow plum and tangerine on the entry. It’s slightly low in acidity, but I admire its lilting quality, and it feels persistent on the finish. Very fine. Drink 2025-2035.

    The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. Fine sour lemon mixed with orange rind on the aftertaste. Excellent. Drink 2025-2050.

    The 2021 Chablis Vaudésir Grand Cru was completely fermented in barrel from which my sample is taken. It has a taut and linear bouquet, lemon curd and light green apple notes with underlying granitic scents. The palate is well balanced with a pure entry, lemon zest and orange rind intermixed with light nettle and gooseberry notes towards the strict finish. Give this well-crafted Vaudésir a couple of years in bottle. Drink 2025-2048.

The racy, intense and tension-filled middleweight flavors possess a bracing salinity on the dry, chiseled and firm finale. This is lovely and a wine that should also repay mid-term patience.     There is just one barrel of the 2021 Chablis Blanchot Grand Cru instead of the usual two and a half that nature bestowed three years earlier. It has quite a hefty reduction on the nose that makes it difficult to read (perplexing Fabien Moreau). The palate is well balanced with a forthright, marmalade-tinged entry. Quite strict with fine acidity, it delivers a citrus-fresh, precise finish without a long tail on the aftertaste. Good luck finding a bottle. Drink 2025-2048.

    Located in the north-west sector of Chablis in the village of Maligny, Pierrick Laroche runs this family estate which was established by his father in the 1970s. After getting a degree in oenology from Beaune and after graduating Patrick travelled the world, doing various internships to gain experience before returning home to start making wine and take over the family vineyards for himself. In 2010 he ceased selling grapes to the local co-operative and produced his first vintage to great acclaim.
    The domain has nearly 12ha of Petit Chablis, classified as such because the limestone tends to be the younger Portlandian rather than the older Kimmeridgian, and as such typically occupies higher sites (Portlandian overlies Kimmeridgian) and has less clay. Pierrick is convinced that his largest parcel of Petit really ought to be classed as Chablis; it makes wine like Chablis and indeed is surrounded by AOC Chablis vines.
    Brilliant pale straw to straw colour with highlights of green around the edges and a watery hue. Aromas of lime and green apple mix with wet slate, oyster shell and subtle fresh herb notes. Minerally pear and lime flavours are dispersed across the palate with some oyster shell elements and infusions of fresh herbs lying underneath. River stone like textural feel finishing dry with brisk acidity and a slatey mid length aftertaste.
    Drink over the next 2-3 years.

    One of the greatest Premier Cru terroirs of Chablis, Montée de Tonnerre has a sandy, rocky topsoil rich in Kimmeridgian limestone. The one-hectare parcel that produces this wine is situated within the lieu-dit of Chapelot, which is separated from the Grand Cru Blanchot by a narrow ravine. The vines cover two contiguous plots, one 50 years old and a second parcel recently replanted. This is regularly the most mineral, chalky, deep and powerful Premier Cru Chablis in the range.

    Moreau’s Petit Chablis comes from a single 2.5-hectare site in Beine, just outside Chablis on the way to Auxerre. It has a southwest orientation and lies on Kimmeridgian soils (as opposed to the higher Portlandian soils on which most Petit is grown). Half of the plot is home to 25 to 30 year old vines, while the other half is somewhat older at 45 to 50 years old. Naturally fermented, this wine was vinified in large vats of 32 to 100 hectolitres.

    Moreau’s village Chablis is drawn mostly from 20 to 30 year old vineyards in Préhy and Courgis, both in the south of Chablis. Then, there are parcels in Chablis and Chichée (under the Premier Cru Vaugiraut). All up, the domaine has the luxury of working with 30 parcels scattered across the appellation, representing a variety of soil structures and exposures. All the fruit from the younger vines is sold off in bulk, which perennially helps Moreau deliver a Chablis greater than the sum of its parts.

    The Chablis was picked over various dates, depending on the plot. The fruit was subject to a very gentle four-hour press, and the juice was fermented with natural yeasts (a rarity in Chablis). It was raised mostly in tank, yet the élevage was unhurried. This spent 20 months on lees, considerably longer than most Chablis of this level. These traditional methods, along with hand-harvesting, the quality of the terroir, low yields and the full ripeness levels at which the fruit is harvested help to explain the mouth coating texture, salty depths and the quality that is on offer.

    TOP VALUE & UNDER THE RADAR The new generation arrived in 2010 with the arrival of David & Arnaud, following on from their father/grand-father. Roland first bottled his own wines in 1979 and the domaine has gone from strength to strength in recent years. Vauprin is a special selection on the hill of Vauprin, situated close to Lignorelles. Vines range from 20-80 years old and the parcel is 1.8ha in size. This AP Chablis is notable for the confident way in which oak is used (up to 50%, ranging from new to five-year-old). Lovely density on the palate allied to purity of fruit. Here, the oak really does add a lot of complexity but the Chablis character is still evident underneath. A very fine Chablis. Drink 2023 - 2027.

    From south-west facing vines in the hills around Lignorelles, the vines were planted in the 1960's and cover 3ha. The wine is fermented in steel tanks, with 60% aged for 10-12 on lees in tank, and 40% in older wood. Doesn't have quite the richness of the Vauprin Chablis but this is still a very fine, pure expression of 2021. Lovely acidity and mineral notes compliment the grapefruit characters and ripe pear fruit on the palate. Complex and classy. No hurry to drink this. Drink 2023 - 2027.

    This cuvée had the highest degrees of the vintage chez Lavantureux. Fresh pale yellow. Good plums on the nose, very joyous, a wine at ease with itself. An extra degree of succulence and more acidity too, very well handled. Half has been made in barrel but there is no evident wood effect. Drink from 2024-2028.

    Clean bright colour with a classy delicacy. There is an impressive level of detail, some coconut dusting on the grass, excellent acidity behind, growing out if its reductive phase, with a little lemony touch behind. I used not to like Vau de Vey much until I discovered it chez Lavantureux.

Of this, 0.95ha is within Vau de Vey, consisting of vines averaging 35 years of age. A full, fleshy and dramatic Vau de Vey, with ripeness and generosity of fruit kept in check by the climat’s freshness. Maturation of 50% of the blend was in old oak which has added a touch of spiciness and extra intrigue to the palate. Very impressive. Drink 2022 - 2027.

    Pascal Robin is a passionate vigneron and runs his negociant business from the cellar of his house in Quenne, just west of Chablis. He sources grapes from across the Chablis region, and works to biodynamic principles in the cellar including respecting the lunar cycles, and a light touch with vinification. Ageing occurs in a mix of stainless steel tanks and old oak barrels, and the wines stay on their lees for a period of 10 to 18 months.     L'Oree Delys is a vineyard located in the commune of Milly, with the vines planted in 1938. The plot is north facing, situated next to the premier cru vineyard of Les Lys.     From vines planted in 1938 not far from premier cru Les Lys, the 2020 Chablis Vieilles Vignes L'Orée Délys reveals attractive aromas of citrus zest, honeycomb, white flowers and pear, followed by a medium to full-bodied, satiny and incisive palate that's pure, fleshy and precise.     Pascal Robin is a passionate vigneron and runs his negociant business from the cellar of his house in Quenne, just west of Chablis. He sources grapes from across the Chablis region, and works to biodynamic principles in the cellar including respecting the lunar cycles, and a light touch with vinification. Ageing occurs in a mix of stainless steel tanks and old oak barrels, and the wines stay on their lees for a period of 10 to 18 months. Authentic Chablis made with exacting standards designed to work wonders with a range of cuisine.

    The premier cru vineyard of Fourchaume is located on the right bank of the Serein River, opposite the town of La Chapelle. Given the generally sunny West/South-West orientation, and soils composed with more brown clays than the stony terroir elsewhere, this is an especially intense and complex vineyard for Chablis. Pascal uses only indigenous yeast for fermentation, and vinifies this wine in 100% old neutral oak barrels.

    While Vaulorent is part of the larger Fourchaume set of premier cru vineyards, it's particularly well regarded as it sits on the same slope as the grand cru vineyards, bordering Les Preuses. Vaulorent shares the same limestone-rich Kimmeridgian soils as the grand cru plots, yet with a varied aspect from true south to an area facing north west.

    This is aromatically quite similar to the Butteaux if more elegant thanks to offering more spice and floral elements. There is less concentration but more refinement to the utterly delicious middle weight flavors that are also supported by lemon-tinged acidity on the very dry, focused and lingering finale that is youthfully austere. Here too at least some patience is advised. Drink 2027+.

    The 2020 Chablis Montée de Tonnerre 1er Cru presents a tightly wound nose that opens with aeration, revealing sea spray and orange peel notes, quite strict and focused. The palate is well balanced with fine acidity, taut and fresh, although I find the Vaulorent displays a little more personality and complexity on the finish. Drink 2024-2038.

    The 2020 Chablis Les Butteaux 1er Cru had received a bit of SO2 a couple of days before my visit. For that reason, it is a little muted on the nose, opening gradually to reveal yellow flower scents. The well-balanced palate offers grapefruit and melon notes, a fine bead of acidity and good weight on the finish. It does need to cohere in the glass, but this has good potential. Drink 2023-2035.

    Once again there is a citrus confit element suffusing the aromas of tidal pool, mineral reduction and ripe pear. The rich and even fuller-bodied flavors brim with dry extract that imparts a sappy texture to the citrusy, clean and very dry finale. This delicious and refreshing effort will need to add better depth to achieve the upper end of my predicted ranged. Drink 2027+.

    The 2020 Chablis Fôrets 1er Cru is taut and delineated on the complex, engaging nose, delivering plenty of green apples and revealing hints of musk and fennel with time. The intense palate is very well balanced and powerful. Quite fruit-driven and rounded toward the finish, so I suspect this will drink earlier than Piuze’s other cuvées. Delicious. Drink 2023-2033.

    While the origins of this domaine date back to Charles-Louis-Noel Billaud in 1815, it's the current generation winemaker Samuel Billaud that has made waves with the exceptional quality of his wines produced since the creation of this project in 2009. Following the sale of the family business Domaine Billaud-Simon to Faiveley in 2014, Samuel received further prized parcels of land and now makes wines from five of the grand cru vineyards, and five of the top premier cru vineyards. The wines are vinified in a mixture of stainless steel and large old wood barrels, the latter mainly for the premier and grand cru wines.

    An elegant, admirably pure and airy nose freely offers up its aromas of green apple, lemon rind, oyster shell and iodine. There is again fine energy and detail to the equally saliva-inducing medium weight flavors that flash plenty of salinity on the complex, long and balanced finale. This too is excellent for its level. The taut palate is vibrant and fresh with a fine bead of acidity. It gains weight with aeration and delivers a fresh, sea-spray-tinged finish. Just add your favorite seafood. Drink 2023 - 2033.
