Japanese Whisky

Decades ago, both local and international interest in Japanese whisky was low, so few barrels were being laid down for extended maturation. Recent awards led to greater recognition and a massive under-supply. Nowadays, unless you visit bars or auction houses, there's usually no older stocks to sell. Global demand has been further accelerated by a collector rush, sending prices skyrocketing. Unprepared, many Japanese distilleries have discontinued their age statements, consolidating them into NAS bottlings which include younger whiskies. The dropping of age statements doesn't always translate into inferior quality. In fact, the country's best blenders have risen to the challenge of creating a great assemblage from a restricted inventory.

    Fuyu means "Winter" in Japanese. This three year old blend is a run of around 6000 bottles made from 50% malt and 50% corn plus a little wheat from Honshu island. Initially aged in American oak barrels, before bottling it was transferred into Mizunara casks for six months, adding those elusive characteristics that makes this wood prized (and expensive). Suntory began to experiment with Japanese Oak (Quercus mongolica) after the Second World War when supplies of foreign oak were difficult to source. It made a far from ideal vessel: Mizunara's loose grains tended to cause leakage, and also created challenges in terms of timber selection and cooperage. Blenders at the time had few kind words to say about the wood. It's scarcer than European and American oak, notoriously expensive, and to top it off, the trees are harvested at around 200 years old (compared to around 75 for American/European oak).

    For drinkers, the obvious question is "Does Mizunara oak give a distinctive flavour to whisky?" The consensus is that it tends to offer a more definite coconut aroma. Other sources suggest the wood contributes attractive sandalwood notes.  According to the producers, in this bottling, expect notes of coconut, caramel, smoke, and cooked fruit. 45% Alc./Vol.

    Created by Ichiro Akuto at his Chichibu Distillery (est. 2004) using both local and imported whiskies, Ichiro's intention here is to offer a quality Japanese experience that's also affordable. Depending on your source, his own malt forms the base (1-3 year old Chichibu), combined with 3-5 year old whiskies from Scotland, Ireland, Canada and the US. The composition is vatted in two 5000-litre wooden barrels built by renowned French cooper, Taransaud. Non chill filtration and a decent ABV contribute added depth and mouthfeel resulting in a quintessential example of Japanese blending skill that's also food-friendly. 46.5% Alc./Vol.

The second in the series was matured in a Sherry Butt, bottled at 52.1% without chill filtration and packaged in purple. Kanji writing on the label is by calligrapher, Souun Takeda, one of the most famous Kanji artists in Japan. His artwork is highly praised for its innovative, yet traditional way of expressing the beauty of the Japanese language and spirit. Normally these very rare Karuizawas are sold as full sets of eight making the cost prohibitive for most collectors.     Using artwork from 19th-century Japanese artist Yoshitoshi Tsukioka's New Forms of Thirty-Six Ghosts, the Ghost Series from Nonjatta unfolds even more expressions from the Karuizawa distillery. Number 7 in the series, entitled "Time Slip", is one of the more unique bottlings. Blended back in the 1970s, this whisky contained both Karuizawa malt as well as Kawasaki grain distillate, which was laid down to rest under glass. Fast forward to the 1980s and the blend was transferred to ex-Karuizawa Spanish Oak for finishing, quite a long one at that being bottled in 2015. One of only 140 bottles, this looks to be one of the more drinkable releases from two legendary distilleries. Collectible.

    While most other Japanese distilleries have followed the methods of Scotland, Mt. Fuji Distillery is influenced by major whisk(e)y producers all around the world, which explains this tri-part blend distilled using three different methods, each giving their own unique flavour profile. Although the exact mash-bill isn't stated, the backbone of the spirit is reported to be a 'Canadian style' grain, made with a batch distillation in something similar to a kettle still. That's supported by a Bourbon-style distillate using a Doubler, and a third Scotch-style light grain put through a continuous multi-column still. The triptych of profiles comes through in the flavours. Fuji smells a little more malt-like than typical single grain with creamy soda and vanilla malt enhanced by delicate fruity notes like stewed pears and caramelised apples. It's also fuller, richer and with more mouthfeel than you'd anticipate. There are the standard lashings of vanilla wafer but they sit over a backdrop of poached orchard fruits and warming wood spices, followed by more creamy soda, hints of dried banana and a lovely flourish of American oak which gives a Bourbonesque or light rye character to the finish. This release was initially for bars only, but from early 2021 it became available for regular tipplers in Japan and then abroad. A good thing. It's a single grain with terrific mouthfeel, and one that deserves a wide audience. 46% Alc./Vol. Non chill filtered.

    Notes from the producers... NOSE Aromas of poached pear, rustic fruit tart, Cognac and marron glacé. PALATE Seamless mouthfeel with multi layered flavours of poached pear, orange marmalade, raspberry jam, baking spices, and bitter chocolate. FINISH Mellow with gentle sweetness and pleasant spiciness, smooth with medium length finish and a hint of exotic incense.

    Produced in runs of around 1500 bottles, this sherry matured Matsui comes with very positive reviews from several quarters.

    Other reviews... a plodding nose, but safe and secure with light grape and toffee on nodding terms; very young barley and toffee hold court until spice and dried plum notes begin to find their home; an unusual finale with an intense dryness at odds with the chest beating muscovado sugars; chewy and sticky, the youthfulness of this vatted malt is overcome by the intensity and richness of the malt and dark sugars.     Built in 2016, Tsunuki is the second distillery owned and operated by Mars Whisky. Situated in the Kagoshima Prefecture in the south of Japan, its location is also the birthplace of their business, Hombo Shuzo Co. more than 100 years ago.

    The 2022 edition is the fledgling distillery's third ever release, following on from 'The First' and 'Peated'. Majority matured in bourbon barrels, on the nose anticipate a fresh sweetness reminiscent of lemon cake, followed by hints of black tea and a whiff of smoke, while the palate boasts a bitter sweet fruitiness like Orangette and the finish is long and rich, helped by the fact that it's non chill filtered and bottled at a higher than normal ABV of 50%.

    One of three high-strength editions labelled as "Distillery Limited" and originally available via the distillery only. Readers may remember Miyagikyo making headlines in September 2015 when they discontinued their entire range due to stock shortages caused by an unprecedented boom in Japanese whisky. The label returned to market with a single NAS expression. Since then it's been the only official release that's readily available - anything else comes from the secondary market or the distillery direct. If you've been wanting to up the ante and get closer to the 'real' taste of 100% Japanese whisky with no imported additives, this is a perfect opportunity. The 'Key Malts' series lands at a uniform 55% which is considered close enough to cask strength. At the time of writing, prices vary dramatically. In Australia, it's not unusual to pay $350 plus (if you can find them).

    Miyagikyo is Nikka’s second distillery, opening in 1969. Some commentators still refer to it as Sendai, which was its name before Asahi took control of Nikka in 2001. Founder, Masataka Taketsuru's intention was to expand the variety of malts available for his blends, so from the outset, the aim was to build the polar opposite of Yoichi. He sited Miyagikyo partly because the Hirosegawa and Nikkagawa rivers deliver a high-quality water supply. That combined with Miyagikyo’s different natural environment and the use of steam heat distillation, as opposed to coal and direct flame, results in a malt with a relatively mild and fruity character compared to the more powerful style of its sister distillery. Pot stills at Miyagikyo are considerably bigger too, and include boil balls along with an upward sloping lyne arm. This all contributes to a considerable amount of copper contact, stripping out the heavier compounds and leaving a delicate style of newmake. Finally, more unpeated and lightly peated barley is utilised at Miyagikyo, with the majority imported from Scotland. Although it's not stated, 'Malty & Soft' is likely to be a mix of refill Bourbon and refill sherry casked whiskies allowing the fruity distillate to take centre stage.

    Other reviews... Never had the ‘Malty & Soft’ before, neither at 12 or with NAS. Colour: pale gold. Nose: rather in the style of the regular NAS, just even greener and almost acidic. I find it profound, and always love these very sharp, very well chiselled styles. Lemon and clay infused in strong green tea. Or there, old stone teapot. With water: lovely. Barley, clean mud, pomelos juice. Yes you may squeeze pomelos. Mouth (neat): really sharp, starting lemony, with green oranges as well, and then more sweet barley (syrup) and a slightly prickly pepper – which I do not hate at all (?) With water: gets a tad rounder and fruitier (peaches) but also grassier. Same Sauvignony kind of profile. Finish: long and millimetric, which is no oxymoron. A narrow malt that’s excellent. Comments: at times, there are echoes of Clynelish. 87 points - whiskyfun.com

    Other reviews... In general, the Japanese sherried whiskies don’t do things by half, but this one’s not very dark, let’s see… Colour: deep gold. Nose: bang, the same massive box of used matches as in the Yoichi in the same series. And there’s a lot of gunpowder too, so I think we could safely use the S word here. Behind this thick wall, some walnuts, mentholated tobacco, and perhaps dried porcinis. With water: mead and gunpowder. I know, sounds like the title of a mid-1960s spaghetti western. Mouth (neat): indeed, it reminds of the Yoichi. Unusual notes of burnt caramel, maraschino, and simply burnt cake. Some bitter notes of, well, bitter walnuts and bitter almonds. Not the easiest Miyagikyo ever. With water: it’s complicated. Finish: long, and it’s still quite complicated. Comments: not a fan of this one.     This recent, limited release from Nikka has been produced to exemplify the qualities of the distillery it was made in. Expect this to be a larger whisky and have more emphasis on the regular Yoichi's smoke and wood characters. The travel exclusive Discovery Series from Nikka also has a truer version of the Miyagikyo single malt.

    Following Suntory's lead, Nikka has discontinued its lines of extra-aged whiskies, with some reports that the shortage could last up to a decade before the taps are turned back on.

    Nikka's range of blended, pure malt and single malt whiskies will be exciting new discoveries for any Whisky enthusiast. This 21 Year Old bottling is dedicated to the Father of the Japanese Whisky Industry, Masataka Taketsuru.

    The tale of Masataka Taketsuru's life is of the same fabric legends are made of. Sent in 1918 as a young apprentice to Scotland by his Japanese employers to crack the secrets of whisky, he not only came back with that knowledge but also with Rita Taketsuru (nee Cowan), who went on playing a decisive role in the development of the Japanese Whisky industry. Thanks to her connection to Japanese high society, Masataka was able to finance the company that is now known as Nikka Whisky.This blend of malts is from the two Nikka distilleries, Yoichi and Miyagikyo.

These whiskies have now arrived in Australia. Two NAS versions that differ slightly to the previous versions now represent the entire portfolio. It was yet another move that triggered a buying rush. Reports have it that Tokyo is now pretty much out of age statement Japanese whiskies, unless you visit bars or auction houses.

    Nikka's reasons for the radical new strategy are now familiar. They simply have no old stocks to sell.

The ‘stock shortage’ is not an excuse or a PR stunt – it’s very real. Sources within Nikka have said that it is ‘likely’ that age-statement single malts will be brought back in 5 or 6 years’ time. No official statement to that effect has been made for the simple reason that doing so – in Japan – would be interpreted as a promise (which could come back to haunt them in 6 years’ time)."

    Other reviews... Yoichi age statements are gone for now, but if the whisky stays this good, I can live with that. Black earthy peat, smoldering fires, a turned-out pocket of briny seashells, whole lime, lemon twist, sugared orange, ground ginger, and licorice. Silky smooth, with light, fruity sweetness developing into tangy Spangles, kiwi, and lime juice. The smoky peat is the weft woven through the fruit structure’s warp. The finish is insanely long: menthol, peat, and leather.

    Gamboge/flax/chardonnay color; unblemished clarity. In the first nosing passes I pick up all sorts of malty scents, from nougat to candied almond to malted milk balls to milk chocolate to maple; secondary whiffs after more aeration discover salted butter, lightly smoked, toasty aromas that are basically dry, but also nicely rounded and supple. Entry is savory, bittersweet, grainy, toasted bread-like, nutty; midpalate features a medium full texture that caresses the palate while the dry-leaning flavor profile highlights the malty grain and wood resins, especially the tannic acid which dries out the flavor so that by the finish it’s squeaky clean and tight. A really tasty, well-made malt.

    World Whisky Awards Category Winner for Best Japanese Blend in 2015.

    A long time best seller for Nikka and one of the company's classic brands, but almost never seen in Australia, the Super Nikka was introduced to the market in 1962. Despite being classified as a blend, it's reported to contain a high proportion of malt from the Yoichi and Miyagikyo distilleries.

    Quite youthful aromas of citrus fruit, sherry wood spices and a touch of smoke. The palate is mellow with some citrus and plenty of sherry wood spices. Quite balanced with a good citrus complexity and a slightly smoky finish. Water brings out a floral orange Muscat note, whilst on the palate it brings out some vanilla nuances. - World Whisky Awards Category Winner 2015

    Other reviews... One for no age statement naysayers. An eloquent expression of sweet osmanthus, baked lemon, yuzu, violin resin, rich malts, and bonfire aromas on a favorite woolen jumper. It glides across the tongue with sweet barley sugar, but attests to greater depths; grapefruit, spicy ginger, and mandarin developing milk chocolate-coated, candied lemon flavors. A firm finish: green cardamom spices slowly releasing their grip on the front of the palate, leaving clingy vanilla.     ...Marigold/deep straw color; superb purity. Immediate smells after the pour are grainy, malty, and like brown rice, with background touches of baking spices (allspice, mace), tofu, and soy sauce; secondary inhalations encounter “greener”, more vegetal aromas that eclipse the baking spices. Entry is subtle, keenly spicy (the baking spices make a big return), desert dry, and moderately malty; midpalate features a delightfully and satisfying crisp flavor profile that borders on being astringent and edgy as the maltiness merges nicely with the resiny oak, providing a tightly focused taste experience that’s clean and intensely grainy. Finishes a little too short, deeply malty, and even now a touch peppery. Had the aftertaste not dropped off too abruptly, I’d have given this single malt a fifth rating star. It has a lot going for it.

    Lots of very warm reviews on the blogoshere for this no-age-statement expression of Nikka which reportedly over-delivers for an entry level whisky. Named after the company's founder, Masataka Taketsuru, and aged on average for around 10 years, it includes whiskies from the Miyagikyo & Yoichi distilleries, including malt matured in Sherry casks.

    Other reviews... Firm oak, but compromises sufficiently to allow several layers of malt to battle through with a touch of peat-coffee. Massive, a toasted, honeyed front gives way to really intense and complex malt notes. Superb finish. some late marmalade arrives from somewhere, the toast is slightly burnt but the waves of malty complexity are endless. Not a whisky for the squeamish. This is big stuff – about as big as it gets without peat or rye. No bar shelf or whisky club should be without this one. 43% Alc./Vol.

I taunted you with the first of the initial brace in 2010, the exemplary Yoichi 15 year old (a hefty 95 points). The second is the firm’s vatted malt, Taketsuru 12 year old. A mix of Yoichi and Miyagikyo distillates, it is the latter which is to the fore here: a honey-laden mix of cut flowers, persimmon, vanilla, and apple. More are on their way. 81 points

    Yet another first for Australia - Nikka decided to add their Coffey Malt to their core portfolio in 2014. It completes the Coffey range, originally launched in September 2012 with the Nikka Coffey Grain. Each offers insight into the whiskies that constitute the base of Nikka’s blends. This edition is produced from 100% malt, though technically it's not a single malt due to its distillation in Coffey stills (Nikka imported two from Scotland in 1963). Scheduled as a European exclusive, we're very fortunate to have received a tiny quantity into Australia.

    Tasting note: Brilliant deep gold colour. Semi-sweet aromas of creamy soda, creme caramel, vanilla bean and shortbread followed by flavours of butter menthol lozenge, cream biscuits and an ultra pure, high pitch vanilla bean, dried coconut finish that maintains excellent sweet/dry balance. Creamy soda and bounty bar aftertaste. A gorgeous, one of a kind, melt in your mouth malt that's a must try. 45% Alc./Vol.

    Other reviews... Now a hugely welcome part of the core range, this whisky—made in Coffey stills at the Miyagikyo distillery—uses 100% malted barley as its base. The nose is all tinned peach, tropical fruit juice, and baked banana, with a surprising green celery note, coconut, and sherbet. The palate is silky, with some chocolate, biscuity oak, and orange blossom honey. Water brings those green notes forward to add freshness to the peach cobbler sweetness.     Other reviews... Well, sherry shouldn’t be sweet, but I’m digressing… Liked the older 12 quite a lot back in ’09 (WF 84). Colour: deep gold. Nose: praline, rubber, and indeed, a little sulphur. Walnuts and used matches hold together in an old leather pouch, or something like that. Frankly, I didn’t expect this much sulphur in a Yoichi. With water: struck matches and gunpowder all over the place. Mouth (neat): ah, no, this works very well. Burnt orange cake, cooked honey sauce, candied angelica, cherry liqueur, a drop of yellow chartreuse… It’s quite different from your usual sherried malt, perhaps more candied? Nice feeling. No sulphur that I can detect on the palate. With water: very good. Burnt raisins on a burnt kougelhopf. Yes, a Proust’s madeleine. Finish: quite long, beautifully raisiny, with orange zests and just a touch of clove. Comments: yeah go score this. If you hate sulphur in the nose, say 70. If you don’t care, that’ll rather be, say 86 or even 87. Good, say 80 altogether. Oh those scores!

    Yoichi was set up by founder, Masataka Taketsuru on Japan's northern most island after he left Suntory in 1934. He chose Hokkaido because the climatic conditions reminded him of Scotland where he’d first studied whisky making. The house style is typically rich, peaty and masculine, acquiring a distinct aroma and body from direct heated distillation using a finely powdered coal - a traditional method that's hardly used today, even in Scotland. Usually only sold at the distillery, this one's named for the high proportion of peated whiskies used in its creation. Weighing in at 55% Alc./Vol., it should also be quite intense.

    Other reviews... Liked the older 12 a lot. Colour: gold. Nose: bizarrely, it’s rather the shiest among them three. A rather round peat, say young Caol Ila ex-rejuvenated barrel or something. I know, a shortcut. Whiffs of iodine, cough medicine, almonds, oysters… With water: no, rather a soft Talisker. Mouth (neat): sweet peat! Lou Reed could have written a song about it. Oranges and grapefruits, as sweets and as fresh juices, plus brine and green pepper, as well as a large teapot of lapsang souchong. With water: same. It’s one of the easiest peaters I’ve tried this year (we’re in 2017, am I not right?) Finish: medium, easy, uncomplicated, perhaps a wee tad cardboardy? There is some salt(iness) but not much. Comments: perhaps does it mimic the Scottish peaters a little too much? But yeah, it’s good and flawless.

    Nikka's Yoichi distillery on Japan's northern most island released these annual editions which have been notoriously hard to find. Usually only sold at the distillery, this one's named for the high proportion of Bourbon casks used in its maturation, so expect aromas and flavours American oak and a hint of vanilla.

    Other reviews... Only WF 78 back in 2009, but that was the earlier 12 yo. Right, and that was 2009. Colour: deep gold. Nose: varnish, cellulose, vanilla, nail polish, sawdust… Quick, water! Although it seems that there’s some quince, always a hit at WF Towers. With water: good fruit syrup, vanilla, and cake crumbles. Some kind of breakfasty recipe, perhaps (we don’t do bacon in France!) Mouth (neat): my, this is barley syrup! But I quite enjoy this feisty mix, with coconut sweets, custard, candyfloss, and of course a lot of vanilla. Marzipan and macaroons, plus pineapples. Some similarities with the regular NAS. With water: a little simple, but more than good. Vanilla and oranges this time, with a mentholy background. Finish: medium, rounded, rather on maple syrup. Comments: excellent albeit a little ‘elementary’. But I guess that was the whole point in the first place. Very little peat this time, if any.

    Originally aged for between 2–5 years in ex-bourbon, sherry, and American oak casks, this limited release from Mars Shinshu in Nagano was created from a mashbill of 70% malted barley and 30% corn and finished for just over eleven months in PX (sweet) sherry casks. Anticipate aromas and flavours of clove and nougat, complemented by aromas of dry sherry and sweeter notes of maple syrup.     Famous as the country’s highest distillery, Shinshu Mars has drawn comparison with Scotland's Dalwhinnie. They offer blends as well as their own Japanese whiskies under various names including 'Komagate', 'Iwai', 'Mars' and more. It gets confusing, but what’s clear is they set a high standard for most of the liquid they bottle. Yet another sub-label in Shinshu's portfolio is the ‘Cosmo' range, named after a mountain in Japan's Central Alps nearby the distillery. Featuring their own malts blended with whiskies from undisclosed Scottish sources, this limited edition was extra-seasoned in red wine casks for a year before bottling.     Followers of Shinshu Mars distillery's recent output will already know the connection here. Next door, there is a beer brewery called Minami Shinshu. After three years of aging in traditional oak barrels, Mars further mature this whisky in casks that were used in the production of their neighbour's India Pale Ale. It adds a subtle beer character to the malt. Expect citrus fruits and fresh herbs on the nose with hints of vanilla, grapefruit and orange on the palate. The finish is clean and crisp, a little bit like the bitterness of a beer. 52% Alc./Vol.

New for 2019 comes a blended malt composed of the distillery's own spirit as well as Scotch malt whisky imported in bulk, with the final combination finished in ex-Manzanilla sherry casks. Light and fresh like Finos, Manzanilla sherries are aged close to the coast in Sanlúcar de Barrameda, Spain. They're typically bone dry styles with a salty tang.

    Notes from the bottlers... this builds on the soft and smooth mouthfeel of standard Cosmo, adding aromas of dried fruit, brown sugar, and maple syrup. Chocolate and coconut on the palate, with a slight bitterness. 42% Alc./Vol.

So, perhaps not surprisingly, they've employed wine casks from the Chateau Mars winery in neighbouring Yamanashi to finish this blend, ‘Iwai Tradition’, which has spent over a year in x-red wine casks. 40% Alc./Vol.

    Other reviews... This was the 3rd bottling I tasted at the Hombo Shuzo(Mars) stand at the show. The first 2 were the “Komagatake” 22YO and the “Komagatake” Bourbon Barrel 24YO. After those two, the thought of being knocked out by a 40%abv blended whisky with no age statement finished in a wine cask seemed highly unlikely. Well I was knocked out by the quality of this whisky for the price and so was everyone else I talked to that tried it. Ok, it was only a single dram so it will not be until my bottles arrived that I can confirm, but initial impressions were that this will be right up there with the best value, quality daily drams anywhere in the world. Hmmm, I think I should buy a few more.

    Kiichiro Iwai, the namesake for this Mars Whisky, was for many, the "quiet" pioneer of the Japanese whisky industry. It was Mr. Iwai who built the brand "Hombo Brewing" (Hombo Shuzo) as well as providing the instructions for whisky production there. He was Masataka Taketsuru’s immediate superior at the turn of the century and was responsible for sending Taketsuru (of Nikka fame) to Scotland in 1919 to learn how whisky was produced. The Shinshu distillery (aka "Mars"), founded in 1985 and in operation from 1985-1992 and then 2011 to present is actually Hombo Shuzo's third domestic distillery. The previous have been the Yamanashi Distillery (1960-1969) and the Mars Kagoshima Distillery (1978-1984).

    This release is inspired by the great whiskies of America, being produced using a majority of corn balanced with light malt and aged in ex bourbon barrels. Ideal for daily sipping, in a mint julep or an old fashioned. The nose offers hints of spiced pear, then sweeter, richer Bourbonesque aromas of caramel, vanilla and clove. The Bourbon character comes through on the palate too - quite delicate on entry, building with grilled corn and orange zest rounded off with a lovely burst of baking spices and minty freshness which suggest some rye input here - or some very active Bourbon casks - or both. Overall lighter than most Kentucky styles, but a very convincing homage nonetheless. 40% Alc./Vol.

    These do not come past our door all that often. Originally sold to investors who were given the chance to purchase a whole barrel of Yamazaki, as well as choose the resulting maturation period, the "Owner's Cask" series has since, reportedly, become a cellar door release. This particular one was bottled in honour of the Port of Yokohama celebrating the 150th anniversary of its opening. This bottle represents an opportunity to taste a more pure and transparent expression of Yamazaki whisky. Distilled in 1995 and bottled in 2008 at 61%, grab yourself a piece of Japanese whisky history.

    A slight variation on the original 18 year old Hakushu. So far as we can tell, the presentation is the main point of difference with this expression coming in 'limited edition' packaging. Collectable.

    Production wise, Suntory's Hakushu distillery (pronounced "Hack-shoo") is the largest malt whisky distillery not only in Japan, but in the world. Built in 1973 coinciding with Suntory's 50th anniversary, it's set amidst spectacular pine forests close to the Japanese Alps. Suntory also purchased the distillery surrounds to protect water quality and conserve the local environment. In fact, water from the district is considered the best in Japan, something Suntory have capitalised on by bottling and selling it throughout the country. All the barley required for single malt whisky production here is imported from Scotland or elsewhere (including countries like France, England and Australia). The resulting whiskies make a significant contribution to Suntory's large number of malts and blends. Due to the distillery's height above sea level (700m), low pressure distillation occurs naturally, said to contribute to the light, fruity style of the whiskies

    Other reviews... Unlike their colleagues in Scotland, Japanese distillers do not exchange stock for their blending requirements. This means that each distillery is set up to produce a wide range of styles. Hakushu uses four different types of malt (unpeated to heavy) run through four pairs of differently-shaped stills. Each single malt is a different blend of these bases. While still herbal, this example shows more sherried notes along with sour orange zest, tropical fruit, and some smoke.     Hibiki Blossom Harmony is based on the classic Hibiki blend, mixed with whisky aged in Sakura cherry wood barrels, as sugggested by the floral box design. Yamazaki and Hakushu single malt is aged in Bourbon casks then blended with Chita grain whisky - the latter making up the Sakura aged component in the union. The flavour is reported to be reminiscent of sakura flowers, mellow on the palate, with a rich lingering finish. Bottled in 2021. 43% Alc.Vol.

    Here's one Japanese whisky we never expected to make its way into Australia. If you manage to secure one of these, congratulations: It will be a cause for conversation (and jealousy) amongst any collector with pretensions to completionism.

    Chita is the first new premium whisky brand that Suntory has launched in over a decade, and one which is usually only available in Japan's 'Nagoya' Prefecture as well as Suntory’s Whisky Shops in Osaka and Tokyo. Produced at Chita (aka "Sun Grain") Distillery, founded in 1972 and located in Aichi Prefecture, the whisky has been a regular source for blending with the award-winning Hibiki whiskies as well as other Suntory brands.

    There's not a great deal of information available regarding Chita - Suntory themselves remain silent with regard to production details. What is known is that the primary grain here is corn (though some malt is also used). Being corn based, like bourbon, the whisky is on the sweeter side. Reports have it that this is aged for around 12 years. There's unanimous praise across the web for this 'secret' gem, so we're extremely pleased to have secured an allocation.

    Other reviews... just like the nose, there is a bipolar feel to the shape of this grain, the delivery consumed by soft oils, yet a far more rigid note apparent, to which the oak appears to attach. 92.5 points - Jim Murray's Whisky Bible 2016

    Normally only available in Kyoto, this ume (plum) liqueur has been aged in toasted 'antique' casks that were once used to age whisky from the famous Yamazaki distillery. Very popular in Summer in Japan, in this case, you'll get some aromas and flavours reminiscent of whisky and toasted oak melding with the well-rounded fruity notes.     Shinjiro Torii, the founder of the Suntory company, was a pharmaceutical wholesaler importing liquor from the West before he was inspired to create a uniquely Japanese whisky. In 1923 he built the country's first malt whisky distillery (in fact, the first of its kind outside of Scotland) on a site in the Vale of Yamazaki outside Kyoto where pure water, a diverse climate and high humidity made it an ideal environment for whisky production and maturation. To complete the formula, Torii hired Masataka Taketsuru (of Nikka fame) who had studied the art of distilling in Scotland. In 1929, the company introduced Suntory Shirofuda (Japanese for white label), Japan's first genuine domestically produced whisky. Kakubin (square bottle), a premium Japanese whisky, was born in 1937. The whiskies have become more and more sophisticated over the decades, in particular the older bottlings under the Yamazaki label.

    Local malting of barley was abandoned in 1969 and today malted barley is bought from Scotland. A significant number of European oak x-Sherry casks (mainly oloroso) make up the maturation regime for this whisky; second come x-Bourbon American oak casks, then a small percentage (approx 5%) from the domestic Japanese oak species, 'Mizunara'. Japanese oak tends to impart spicier, sweeter and sometimes more tannic notes than the previous two. Experimentation continues with sandalwood and cedar as well as casks which have previously contained Japanese Plum wine.

    Other reviews... Deep, mature in nature, and very complex. Notes of polished leather, maple syrup, and dark pit fruit, with suggestions of tobacco smoke, wood shavings, and unsweetened chocolate.     First created in 1937 by Shinjiro Torii, Suntory's founder and first Master Blender, this was initially named "Suntory Whisky," but became lovingly known as Kakubin, or "square bottle", due to its unique presentation. That name and the square-cut, tortoise-shell design have remained for more than eighty years. An easy-drinking and highly versatile Japanese bar standard, the Kakubin highball is the go-to for many Japanese out for a night of dining and fun.

    Tasting note: Bright deep gold. Subtle grain and sour dough bread opening sniffs develop into delightful aromas of vanilla and orchard fruit (nashi pear?) Is there a whisper of smoke beneath this? A light, almost creamy entry follows through with a mildly fruity, dried grass and gently spicy mid palate. Deliciously juicy at the finish. Concludes fresh and dry with orchard fruit and hay-like flavours lingering. Light and easy, you could almost mistake this for young Glen Grant.     At the 2010 World Whisky Awards, whiskies from Japan won prizes in two of the top three categories for Scottish-style whisky. No one was surprised; Japanese whiskies have been snapping up awards at international competitions for the last decade. The problem has been keeping up with international demand, with the majority being consumed within Japan. This situation is slowly turning around, with Suntory exporting 106,000 cases last year, up 17 percent from 2008. It hopes to increase sales by more than 20 percent in 2010

    Production wise, Suntory's Hakushu distillery (pronounced "Hack-shoo") is the largest malt whisky distillery not only in Japan, but in the world. Built in 1973 coinciding withe Suntory's 50th anniversary, it's set amidst spectacular pine forests close to the Japanese Alps. Suntory also purchased the distillery surrounds to protect water quality and conserve the local environment. In fact, water from the district is considered the best in Japan, something Suntory have capitalised on by bottling and selling it throughout the country.

    All the barley required for single malt whisky production here is imported from Scotland or elsewhere (including countries like France, England and Australia). The resulting whiskies make a significant contribution to Suntory's large number of malts and blends. Due to the distillery's height above sea level (700m), low pressure distillation occurs naturally, said to contribute to the light, fruity style of the whiskies. The 12 Year Old Hakushu expression is considered a good introduction to Japanese styles for those who enjoy smokey malts, though the degree of smokiness is said to vary from batch to batch.

    Tasting note: [43.5% Alc./Vol. Batch tasted] Bright gold. Restrained aromatics; faint suggestions of toast and honey. Several minutes does little to stimulate the bouquet adding muted scents of sponge cake without budging the intensity. A semi-sweet, juicy delivery features lipsmacking, biscuity mid palate malt, hollowing towards the finish with some late sweetness and delicate oils entering. Ends more aperitif-like - clean and crisp with the biscuity malt lingering. Youthful and vibrant, but not peaty.

    Other reviews...A floral nose, slightly smoky, with some brine. Huge flavour in the mouth, toffee, fruit and peat smoke. This could almost be Caol Ila. The finish is medium, smoky, with drying notes of oak. An extremely well structured, traditional malt whisky. - www.whisky-pages.com

    ...Light amber/marigold color; excellent purity. Smells of sawdust and pecans in the opening sniffs, plus a bit of summer flower garden (carnation) and spice (nutmeg); there’s an acute nuttiness to the aerated bouquet that becomes more like candle wax with further exposure to air; intriguing and unique. Entry taste is cocoa-like, bittersweet and nicely textured, almost oily (a plus); midpalate stage reveals an intensely grainy core flavor that’s both astringent, slightly sweet and caramel-like.     Launched in March 2015 as the fifth addition to Suntory's celebrated "Hibiki"collection, "Harmony" follows on from Yamazaki and Hakushu Distiller's Reserve which are also younger, NAS (no age statement) whiskies, aimed at maintaining sales due to the scarcity of older whisky stocks. (Several years ago, Nikka decided to discontinue a large number of their whiskies due to increased demand and a decrease in supply).

    Details of the composition of Japanese Harmony haven’t been revealed, but, like the Distiller’s Reserve, it's likely a blend of young and old material. Single malts entering in the blend come from Yamazaki and Hakushu distilleries, while grain whisky comes from Chita. The whisky resounds with calm complexity and “Wa,” oneness - at least that's how the producers like to describe it. 43% Alc./Vol.

    Other reviews... Poised and complex, with typically lifted fruitiness: strawberry ice cream, pineapple, peach, balanced by delicate oak, bamboo shoot-like delicacy, then lemon. The palate is more rounded than that very forward nose, with toffee notes adding some weight. A touch of smoke comes along in the mid-palate, before fruits and caramelized coffee biscuits. Water allows the flavors to flood the palate. Exemplary blending skills and classically Hibiki.

    Made from 100% malted barley, this 12 year old expression is produced in copper pot stills and aged in casks of three different kinds of oaks: American, Spanish and Japanese.

    Tasting note: Brassy gold. A mild prickle to the malt; develops with aromas of stewed pear / apple tart, fine chocolate and vanilla. After five minutes aeration this becomes more sponge cake-like. Medium weight, stewed orchard fruit profile suggests a thread of peat. Builds in the mouth with a depth and texture reminiscent of Linkwood or Glenlossie at their best. 43% Alc./Vol.

     

    First tasted 2010 (Tasted from a miniature. The Yamazaki has been noted for batch variation. The batch No. here is unknown.) Bright pale gold appearance with a water like hue. Somewhat restrained. At first honeyed barley and pine wood like scents. With time in the glass subtle dried fruit notes emerge that are almost berry like. Unusual. A big, warming, spicy flavour-wave that subsides to reveal sweet barley, confectionary and vanilla notes accompanied by a trace of smokiness. Creamy back palate. Relatively abrupt aftertaste of dry, cedary oak with a subtle toffee fade. Pleasant. 86 points

    Other reviews...Deep amber/18-carat gold color; impeccable purity. This seductive opening aroma is gently spicy, malty and almost brown rice-like; the secondary aromatic profile is fully integrated, dusty dry, slightly woody/sappy and delicately spicy; understated, deep and enticing aroma of the first rank. Entry is firmly structured, moderately oily/viscous, nutty and candy bar-like; midpalate stage shows off a richness that’s world-class, toffee-like and woody/resiny.     An intriguing Japanese release from the Yamazaki distillery stringing from the recent movement toward non-age statement whiskies from producers, this one with a noticeable difference. Suntory's Yamazaki Distiller's Reserve is a mix of malts varying in age and cask type, originating from ex-red wine casks matured for approximately three years, older Sherry matured malts approximately twenty years in age and Mizunara casks, otherwise known as Japanese oak, for a twelve year period.

     

    Tasting note... Amber gold appearance. Understated and pure with aromas of vanilla, cocoa dusted malt and honeyed cereals; hints of fruit cake here too. More stewed pear with air contact. Medium dry, fresh delivery offers a spicy, orchard fruit, vanilla and juicy malt burst. Succulent and fruity to finish. Almost a floral delicacy to the aftertaste. Love the mouthfeel here. A gorgeous harmony of flavour and texture. 43% Alc./Vol.

The birth of Japanese whisky - a crash course in distilling and blending.

It's no surprise that Japanese distillers are winning awards, given that Japan has been making whisky since 1923. Masataka Taketsuru's early efforts are now part of whisky folklore. Visiting Scotland to undergo a crash course in the art of distilling, he spent brief periods at both Longmorn and Hazelburn. Lacking the centuries of trial and error that the Scots worked through, the nation's whisky experiment took a scientific approach early on, which later incorporated the people's cultural affinity with nature as a creative and harmonising force. Japanese whisky style. Japanese whiskies differ from other styles being typically distilled from clear wort after long fermentations and are matured in a diverse range of casks, including x-plum liqueur barrels and those made from the indigenous Mizunara oak. To generalise, the styles reflect the national cuisine: delicately flavoured, elegant, rarely overpowering - in short, food whiskies that also lend themselves to a warmer climate. However, there are notable exceptions. Consumption has been almost exclusively domestic, in fact, Japan has only recently started to export to major markets like the US.
