Moscatel maturations are a relative rarity in the whisky world, so kudos to Patrick and Gilbert Zuidam for bringing this to our attention. Non-chill filtered. 46% Alc./Vol.

Where Bols, Filliers and Bokma have become household names in Dutch spirits and liqueurs, you can now add another: 'Zuidam'. By European standards, this project is very, very young - only reconciled by a precociousness that seems to flaunt five centuries of distilling history. In 1975, Fred van Zuidam and wife, Helene opened a deliberately contained operation with one small copper still. That modest initiative now turns out a staggering 600 products, including liqueurs, genevers and new world style gins. And with help from their sons, they've turned to making whisky in a serious way. Described as "a distilling geek" and characterised by his frank and pragmatic attitude, Patrick Zuidam supervises the operation. With his brother Gilbert, the pair have progressively upgraded to four brand new copper stills and over 1000 oak barrels (typically American oak as well as x-Bourbon and Oloroso Sherry). Zuidam presently produce peated and unpeated malt as well as rye. Because they mainly use new and/or once used barrels, and they store the barrels in a warm warehouse, the whisky ages rather quickly but the results are self-evident.

Thick and malty on the nose with marzipan / wedding cake, and subtle wafts of sooty smoke developing orange peel / orange spice cake and chocolate box. The peat and sherry combine to give a delightful toasted barley quality to the delivery; repeats the orange spice-cake in the middle stages. Coming as a complete surprise from the Netherlands, this slightly lower proof expression, aged in virgin American oak for a minimum of 4 years nails it again, albeit in a softer delivery. Tasting note: Big, doughy rye aromas dispel sharp spices. Air contact adds scents of Marie biscuits, orange spice cake and fresh-sawn oak. Lovely texture showing more vanilla input than the 100, with little compromise to the intrinsic grain; flavours of dark rye bread, pepper and subtle mint ring true to style in a perfectly rounded whisky. In line with other distilleries who have responded to one of the fastest growing segments of the whisky category, Zuidam began work on a peated version of their malt over a decade ago. Aged for a minimum of five years in new American oak barrels and with phenols around 20-25 ppm, the peated version of Millstone whisky hit the market in 2010, winning a silver medal in the International Spirits Challenge in London in 2011. The use of new barrels and the fact that they're stored in a warm and dry warehouse ensures that the whisky ages relatively quickly. Expect rich tones of fruit (orange and banana), cinnamon, cloves and honey combined with vanilla and toffee on a foundation of soft smoke. Tasting note: Brilliant gold. Enticing spiced apple, nashi pear opening sniffs are distinctive and unexpected. Smoke enters as soft puffs of pipe tobacco with further exposure adding bubble gum, fruit mince pie and finally light lanolin. Medium bodied; hints at wet wool and herb infused honey (lavender?) A spice pantry nose suggests ginger biscuits, fruit mince pie and hints of orange zest, reflected on the palate in a nicely-rounded, medium bodied delivery; Quaffability is the keyword here. Overall, this is one of Zuidam's most relaxed whiskies - teaming wood spices only slightly knocking the balance out at the finish. 40% Alc./Vol.
Other reviews... A surprise malt, this. French oak normally belts out a bit more bite and tannic pungency. Here it seems to be happy to go with the malty flow. 88.5 points - Jim Murray's Whisky Bible 2022

A young Bourbon-like bouquet evokes gobstoppers, vanilla malt and cinnamon buns, but gets more malty and 'mature' with time in the glass. Packs decent weight given the middling ABV, starting out dry and brittle, developing with budding spices and ending with delicious oak-barley integration. Coconut and vanilla gain definition before the crisp, medium-long finish. 100% new American oak matured. 43% Alc./Vol. Silver medal at the Wizards of Whisky competition in London in 2014.

With his brother Gilbert, the pair have progressively upgraded to four brand new copper stills, over 1000 oak barrels (typically American oak as well as x-Bourbon and Oloroso Sherry), four production lines and modern tank storage facilities topped off with a curious throwback from the past.
"It might seem like a gimmick", says Patrick, "but the truth is that when I took over here I wanted to introduce a new genever but there was absolutely no money. I asked a local miller if he would do it cheap and he said he would do it free in return for a bottle of genever. We now use seven local windmills."
While it preserves an iconic piece of Dutch heritage, Patrick admits " it's a big job because you can't drive a truck to the windmill because it's up a hill. Every bag of barley must be carried up and back again".The millers believe that the traditional slow grind causes almost no increase in the temperature of the barley and thus helps preserve the grain's wonderful aromas. Patrick is less convinced, "It's a good story, and a nice local angle. But if I'm honest with you, I don't believe a word of it."
Zuidam presently produce peated and unpeated malt as well as rye.
Spirits writer, Dominic Roskrow, who visited the distillery in 2012 recognised the latter as a significant testimony to the dogged expertise and determination exhibited here."It takes a huge amount of skill to make rye whisky" explains Roskrow. "It tests distilling skills to the limit. Rye is notoriously difficult to malt, and it doesn't convert sugars to alcohols without a fight, either. Most rye whisky will be made with a proportion of malted barley to help the conversion process. You can make 100 per cent malted rye whisky, but be prepared for a struggle".
Patrick acknowledges the challenge: "I really like the taste of the rye whisky, which has a velvety side to it unlike American rye whiskeys. But it's a hard grain to distill." he says. " The mash goes thick like wallpaper paste and has the same oily texture. If it ferments too quickly big bubbles of carbon dioxide explode up, sending this thick substance all over the place so you have to wade through it. It takes some cleaning up."
Because they use only new and/or once used barrels, and they store the barrels in a warm warehouse, the whisky ages rather quickly but the results are self-evident. While there are other upstarts in the Netherlands, so far Zuidam is arguably the only one that counts. This expression is a sensational 100% Rye based whisky, bottled at 100 proof, and aged in 100% New American oak - do you sense a theme here?
Tasting note: [Jan 2004 Distillation, tasted from a near empty bottle.] Deep polished copper. A slightly botanical opening is followed by a fantastic rye bouquet that's increasingly pure and dense; it excites the senses with ryvita biscuit and honey notes, gaining hints of dried apple and a wonderful white pepper overlay. Almost crunchy in the mouth with a text book delivery of rye soaked oak and a superb ginger bread, dried apple and peppermint surge to finish. The oak peeks through at the fade but rye in its purest form is the main feature here. Coming as a complete surprise from the Netherlands, it ranks as one of the very best examples in its genre tasted to date. Outstanding. 50% Alc./Vol.
Other reviews...The IMAX of rye. Zuidam Distillers seem to have intensified every aspect of this small batch 100% rye. The plum is fresher, juicier even, the spices more assertive. There’s more creaminess, fruit skin piquancy, slabs of chocolate, allspice, ground cinnamon, and a greater rye character by far. This thumps the tongue hard, delivering quite an experience. ...the rye fair cracks against the teeth with added Demerara flintiness. Salivating, rye-fruity and simply pulses with that forceful grain; the small still oils accumulate to form a thickening backdrop. The Zuidam Distillery was started back in 1975 by Fred van Zuidam as a deliberately contained operation with one small copper still. It took more than a decade to forge their present reputation as the finest distillery in the Netherlands. In 1989 Zuidam expanded their warehouse to 600 square meters and one production line. Presently, both sons, Patrick and Gilbert, run the distillery under the watchful eyes of their parents. With four brand new copper stills, over 1000 oak barrels, four production lines and modern tank storage, Zuidam is now a state of the art operation, however, they have held on to one throwback from the past - Windmills. These are used to mill the malted barley destined for their Malt Whisky. It not only preserves this iconic piece of Dutch heritage, but more importantly, the producers believe that the traditional slow grind causes almost no increase in the temperature of the barley and thus helps preserve the grain's wonderful aromas.

Tasting note: Deep amber / gold. Butter menthol / barley sugar lozenge in the opening pass. Vaguely grassy? Wafer biscuit? Three or four minutes draws out a sweet spot as the Sherry blossoms and finally you get it: Pure, elegant, nutty malt delivered with a soft touch. The sophisticated restraint continues in the mouth, being fresh rather than sweet, middle weighted, with a nutty, dried fruit, almond biscotti kind of profile, and gorgeous feathery spices fanning out the finish. Vanilla and fruit cake dissolve in the fade. Deceptively long. Beautiful whisky. 46% Alc./Vol.
Other reviews... Near perfect on the sweet-dry balance; fresh lively grape, slowly infiltrated by much heavier and drier tannins....Decidedly raisin shortcake biscuit on the finale; after last year's disappointing sherry bottling, thought I'd need some Dutch courage to tackle this one. But, instead, an excellent cask at work here which ensures an overflow of character. Just underlines the difference between putting a good quality spirit into a less than impressive cask or filling into top quality oak. So, so elegant.

There are hundreds of European distilleries making spirit, but few this good. Its malt and rye whiskies have always been special, but this is Premier League, a world class sherried 12 year old that matches many sherried Scotch whiskies flavor to flavor. [1999 distillation] ...I liked Millstone’s rye very much. Now, how a 1999/2013 could become a 12 years old, I don’t quite know - but we've seen that done elsewhere (at Balvenie, for example). Colour: dark gold. Nose: ho-ho! This one does not nose like any unlikely ‘foreign’ malt, it’s as high in fruits as one of the best Benriachs or Littlemills, if that says something to you. Very impressive, everything is just perfect in this nose, the milk chocolate, the pink grapefruits, the passion fruits, the golden raisins, the touches of cappuccino, the very elegant maltiness... Mouth: oh yes! I’m speechless, I knew of Zuidam but only by name, I just didn’t know that they were making ‘Scotch-like’ wonders. Prejudices prejudices… A great fruit salad with apples and oranges first, then mangos, bananas and many other fruits. Finish: long, fresh, clean, just a tad yeastier. Pencil shavings in the aftertaste. Comments: had I tried this blind, I’d have said ‘it’s an unusual Littlemill’. Only the finish was a little less to my liking. 86 points - whiskyfun.com
