    The Bacardi Bat Device...
    The Bacardi Bat Device appears on every label of every product carrying the Bacardi family name. According to Family lore, it originated in 1862 when Don Facundo’s wife, Dona Amalia Lucía Victoria Moreau, suggested employing the Bat as the trademark for their new rum. Upon entering the first Bacardi distillery, Amalia noticed a colony of fruit bats living in the rafters. Bats had great significance in Dona Amalia’s world. As a lover of the arts, she knew that Cuba’s extinct native people, the Taínos, regarded bats as possessors of all cultural goods. And she knew from local lore that bats were popularly thought to bring good health, fortune and family unity.Her suggestion also was hardheaded and pragmatic. Because of the high rate of illiteracy in the 19th century, a product needed a memorable graphic logo -- a trademark -- to become identifiable and sell. Reports quickly flew across Cuba of Don Facundo’s choice new charcoal-mellowed rums: the carefully aged, rich, dark sipping rums and a miraculous new light rum that was smooth, civilized and astonishingly drinkable.     Classic Cocktail: The Daiquiri Strawberry
    The Daiquiri is a family of cocktails whose main ingredients have traditionally been rum and lime juice. There are several versions however, with some like the Strawberry Daiquiri having a texture similar to a smoothie. Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon.

    Tasting note:[2018 vintage 53.2% Alc./Vol. tasted] This is the fifth single estate Clairin to be released under Velier’s “Spirit of Haiti” label. 'Sonson' is named after Stephan Kalil Saoud's distillery in the village of Cabaret. Here Clairin is produced using a single traditional open fired pot still and an indigenous sugar cane variety called 'Madame Meuze'. Bottled a natural proof, the nose is unlike any other rum: intense, sweet-yet-saline with white pepper and a grassy / tropical fruit accent that continues to evolve. Reminiscent of high-grade blanco tequila, but more like young agricole. Flavours of plantain, papaya seed, dill pickle, brine and struck match. A vivid and potent cross-genre spirit that almost defies descriptors. Fabulous.

    Other reviews... Clairin Sonson is equally at home in drinks that call for unaged agricole or Cachaca – it works great in a Ti Punch and it doesn’t make a bad Daiquiri either. In terms of flavour this is my favourite Clairin thus far and aside from the finish it’s really quite excellent when you consider the rustic nature of how it is produced.     Aside from Agricoles, Clairins are arguably the only white rums worth worrying about. If you can't decide which one to choose, 'Communal' resolves that with a blend of four Clairins: Sajous, Vaval, Casimir and Le Rochers.

    Tasting note: Clear. Pungent, fruity-yet-fresh openings turning briney, caney, grassy, evolving white pepper, candle wax and plantain-like scents over 2-3 minutes of swirling… Silky yet concentrated. Off-dry, bready, waxy, briney flavours are perfectly balanced by an invigorating, vibrant finish hinting at prunes, raisins and late marzipan. Another brilliant Clairin that pretty much clocks the white rum flavour wheel. 43% Alc./Vol.

    Clairin Casimir from the village of Barraderes uses a heirloom variety of sugar cane called "Hawaii". The fresh cane juice was distilled at the Faubert Casimir distillery before being bottled at natural strength.

    Tasting note:[2016 vintage 48.3% Alc./Vol. tasted] Clear. Some fusel / varnish notes before the bouquet evolves an appealing grassy, caney aspect. Brief exposure evokes powerful scents of fruit cake / brine becoming more fresh and grassy after 3-4 minutes in the glass. Full bodied, but nicely poised with off-dry flavours suggesting dill pickle countered by waxy, yeasty notes. Hints of rubber, then gingery warmth and grassy freshness through the aftertaste. Complex, vibrant and delicious white rum.

    Clairin Vaval is sourced from the village of Cavaillon, three hours drive from Port au Prince. A heirloom variety of sugar cane called "Madame Meuze" is the focus here. The fresh cane juice was distilled at the Arawaks distillery under the direction of Fritz Vaval before being bottled at natural strength. Founded after the war by Fritz’s father Danois Vaval, the estate possesses 20 hectares of sugar cane grown without the addition of fertilizers or artificial pesticides.

    Tasting note:[2016 vintage 48.8% Alc./Vol. tasted]Clear with thick legs. A whiff of herbal freshness, also a lovely yeasty / bready / grassy character to the nose. Very pure. Air contact adds hints of varnish, pickle, brine, icing sugar, dilute molasses... Exceptionally soft at this ABV. Medium bodied, dry and fresh with a herbal-bready entry. Sweet pickle flavours, brine and developing oiliness. Ends bone dry, minerally, yeasty with anise / dill freshness lingering. Great stuff.

    Depaz's 'Cuvee de la Montagne' was exclusively harvested from cane growing in the volcanic soils on the slopes of Montagne Pele. The fresh-pressed cane juice was fermented for 48 hours, distilled in a copper column still to 70% ABV, then slowly reduced with water over sixty days. Before bottling, it was rested in stainless steal tanks for at least three months. The result is a floral rum with notes of orange blossom, sweet banana and spice.

    Notes from Depaz... NOSE: fruity, floral and complex aroma, with a specific mineral touch. PALATE: the attack is sweet and honeyed, with a very elegant floral flavours. Sugar cane, orange blossom, banana combined with spicy notes of pepper and tobacco follows. 45% Alc./Vol.

    Nicaragua is an often neglected yet noteworthy producer of medium-bodied Rums from column stills that lend themselves well to aging. Thanks to the exceptional quality maintained by distillers like Flor de Cana, the region's rums have begun to gain well deserved international recognition. Flor de Cana is owned and produced by Compañía Licorera de Nicaragua, which was founded in 1890. Although the brand was not marketed commercially until 1937, it is today considered one of Latin America's most prestigious rums, and has won 72 awards, medals and commendations in the last five years.

    Produced from molasses, Flor de Cana White spends four years mellowing in American Oak before being filtered clear.

    Tasting note: Brilliant, rainwater clear. Understated scents of dried coconut, creamy soda and pineapple pudding. Medium bodied, with a lively canvas of flavours including bounty bar, nougat fudge and sponge cake; slightly peppery, with creamy soda repeating. Finishes well poised and on a less saccharine note. Sappy, caney, grassy aromas as well as white pepper, dried mango and icing sugar follow in an exotic, estery spirit with flavours of tinned peaches, white pepper and a finish that's unexpectedly spicy for a low ABV.     Few people will be aware that as well as being home to the famous rum based medicinal bitters, Angostura, Venezuela makes a number of well-respected barrel-aged golden and dark Rums. Local producers say the combination of tropical humidity and cool winds that bathe Venezuela's sugar-cane fields helps to age the rum faster than in other countries. As José Mandry, president of the Venezuelan Alcohols Chamber that groups most of the country's rum makers says, 'Venezuela is a blessed land situated at the north of South America where the winds don't tear us up but gently rock us, and gently rock our rums.' The change in temperature from day to night stimulates interaction between the alcohol distilled from cane juice and the barrels, enhancing the taste.
    The Pampero range of Rums are relatively new to the global rum market and have just arrived in Australia.

    Pere Labat's unaged agricoles come in three variants with differing alcohol strengths, but with similar looking minimalistic labels. Some prefer the '40' because it has all the signature flavours of the Island Proof 59 without the spirit heat. Expect a classically clean and grassy agricole profile with a slightly sweet edge. 40% Alc./Vol.

    Distillerie Poisson (est. c.1860) is the oldest operation of its kind on Marie-Galante and custodian of one of the most venerable stills in the Caribbean. Built in 1916, not much has changed in the last century, but in 2007, Guadeloupe native, Jean-Cedric Brot purchased the distillery and committed to reinvigorating the storied spirits that made it famous. He has named his brand after Père Labat (Father Labat), a multi-talented French Dominican missionary who introduced Charentaise distillation, the same method used to make Cognac. It made for a rum that was more "floral and round instead of sharp and burning". Today, four kinds of cane are used: red, white, blue, and gray. Some are grown on the estate, some are purchased from local growers. All are hand-cut and brought to the distillery by ox-drawn carts. 72 hour fermentations yield a vin de canne at 5% abv. Distillation takes place in one of two copper creole column stills which have eleven stripping plates and four rectifying/enriching plates. The spirit comes off the still between 69% and 71% abv. The Rhum blanc is placed in open top wooden foudres for 10-15 days and demineralized water is added to bring it down to proof.

    A combination of rums, some unaged, others aged 3 and 12 years, blended and bottled by the French Cognac house, Pierre Ferrand.

    Tasting note: Clear with a pale straw / green blush. Light to moderate aromatics yield notes of unripe banana, green olive and peppercorn, becoming more subdued and waxy with aeration. Starts off light and easy in the mouth but crescendos enough by mid palate to gain a point in concentration. Almost a fine grappa-like profile with subtle fruity / unripe banana flavours leading into a mildly creamy, waxy, grassy finish. Concludes pleasantly spicy, crisp and precise. Not the driest on the market but one of the best. 41.2% Alc./Vol.

    Alexandre Gabriel, proprietor of Cognac Ferrand, comments, “…Our desire was to develop a rum that shows character, elegance, complexity and a great finish – the ideal rum for cocktails … beginning with a 3-year aged Trinidad rum, carbon filtered to maintain its white colour and to remove the heavier tannins while preserving the aromatics developed and refined by aging. Un-aged rums from Barbados and Jamaica are blended, along with a 12 year old rum from Jamaica. The Jamaican rum is an expensive ingredient but key to the taste of the overall blend. Trinidad brings elegance and refinement, Barbados brings character and aromatics with fruit notes without being too heavy and Jamaican brings the funk, the touch that makes it a complete product.”

    Martinique is a French island with the largest number of distilleries in the Eastern Caribbean. Both pot and column stills are used. As on other French islands such as Guadeloupe, both rhum agricole (made from sugar cane juice) and rhum industriel (made from molasses) are produced. These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies.

    J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, where the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelée. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, whereas Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

    Tasting note: Clear. Lemon, meringue, dried fig and mineral aromas with some peppery notes. A soft, silky palate entry explodes into semi sweet flavours of dried fig, green olive and green peppercorns. Slightly prickly, mouthfeel. Long, drying aftertaste of black pepper, green capsicum and boiled confectionary with a subtle mineral fade. A powerful, spicy white rum. 50% Alc./vol.

    Other reviews... Clear. Banana custard aromas with a hint of nutmeg, mocha, and toffee. A lively, silky entry leads to a dry-yet-fruity medium-full body of raisins, figs, nuts, vanilla custard, and banana puree flavors. Finishes with a bold, warming wave of white pepper, spice and mineral flavors. A powerful, rustic, and richly flavorful white rum that will energize any cocktail.     A traditional 'French Rhum Agricole' from the tropical haven of Vietnam. Sampan Overproof has won a bunch of awards from various shows held around the world …Gold, Double Gold, Best of Region and many more. As a style, it's reported to be comparable to unaged Clairin or Paranubes.

The Sampan Vietnamese Rhum is made by the Distillerie d’Indochine: and Antoine Pourcuitte, a long haired Frenchman who seems to be channelling Fabio and who lives in Vietnam, is the man who bootstrapped his desire to make good rums into a business that combines a small hotel and bar close to the beach with a distillery he pretty much built himself (officially it opened for business in late 2018). This newly constructed establishment, which produces one of those excellent white rhums which must be causing the French islands conniption fits, is his brainchild… and it can take its place proudly in the league of small and new fast moving ops who are taking a pure rhum approach to distillation in Asia.... it doesn’t sink on the taste, but follows smoothly on from what had been discerned on the nose. Here, we didn’t just have a few olives, but what seemed like a whole grove of them. Again it tasted dirty, loamy, and also pungent, with initially clear notes of sweet sugar cane juice and sweet yellow corn, to which are added some lemon sherbet, vanilla and aromatic light fruits (pears, watermelon, strawberries) plus herbs – dill and basil.  Soft and lightly sweet, and there’s a background hint of anise as well, or licorice, really nice. Throughout the tasting it stays firm and assertive on the tongue, with a near silky mouthfeel leading to an exit that is pleasantly long lasting and with closing notes of fruits, vanilla, coconut water, and breakfast spices. This is a really nice white rhum – it married the freshness of an agricole with the slight complexity of an entry level vieux and the balance between the various elements was very nicely handled. That pungent opening clearly makes the case that even with the resting period, it was an unaged rhum, something like the Sajous, the Paranubes, A1710, Toucan, Barbosa Grogue, HSE Parcellaire or others of that kind – I liked it a lot, and if it didn’t win any medals, I firmly believe it should at least win a few wallets. - thelonecaner.com

    ...Nose: Man, there is just SO MUCH going on in the nose. There’s a real fresh and lively quality to it as well. There’s cut grass and floral notes, there’s sweet candy floss and liquorice all sorts, but also salty olives. Freshly cut cane, earthy petrichor and even some citrus swirls by. Palate: Not as sweet as it smells, but certainly not dry, those fresh earthy notes are still there, I get some passionfruit, pineapple and pomegranate as well, and there’s also a sort of yeasty vibe going on (like fresh bread dough). What is surprising is how little pepper or heat there is at 54%. Finish: Oddly enough I get a bit of a ‘woody’ note in the finish, more of those earthy and sweet notes chase each other around, and there’s also some aniseed humbugs right at the last. - rumtribe.com.au

    New Zealand’s newest rum company, 'Stolen Rum' has been honored with a Double Gold medal for its Gold variant and a bronze medal for its White rum at the prestigious 2010 San Francisco World Spirits Competition.

    Born in the Caribbean and raised in New Zealand, Stolen Rum was created after Kiwis Jamie Duff and Roger Holmes, caught in the rum resurgence that was taking place worldwide, ditched their day jobs in favour of developing a world class rum.“Stolen Rum had only been in the market for three weeks when we entered the competition. We couldn’t have hoped for a better start.”

    Produced from a molasses ferment and a continuous distillation, maturation takes place in Trinidad, the southernmost island of the Caribbean, for a minimum of two years in individually chosen charred American oak bourbon barrels. The results are carefully blended by hand before being carbon filtered to remove any colour.

    Tasting notes: Clear slightly viscous appearance. Offers a strong bouquet combining opening scents of molasses and spice (white pepper and vanilla), before turning more ripe fruit like - specifically very ripe cantaloupe or grapes. A super soft entry accumulates depth as a slow spice wave unfolds delivering excellent length. Medium bodied, semi sweet and mildly fruity-meringue like mid palate.     Since 1965 Bacardi rum has been produced at the Bacardi & Company Limited distillery on New Providence. Bacardi rum is the only rum produced locally in the Bahamas and was the first major product to be exported from the Bahamas. Bacardi currently exports the equivalent of seven million standard cases of rum to Europe per year. The distillery houses five distilling columns and has a total production capacity of 27 million litres of distilled spirit per year.     Classic Cocktail: The Daiquiri Strawberry
    The Daiquiri is a family of cocktails whose main ingredients have traditionally been rum and lime juice. There are several versions however, with some like the Strawberry Daiquiri having a texture similar to a smoothie. Originally the drink was served in a tall glass packed with cracked ice. A teaspoon of sugar was poured over the ice and the juice of one or two limes was squeezed over the sugar. Two or three ounces of rum completed the mixture. The glass was then frosted by stirring with a long-handled spoon.

Just 102 bottles of this non chill filtered Cadenhead's beauty have been released. Its plush green and canary yellow packaging evokes tropical rum punches and Tiki cocktails.     Named after the wild sugar cane that grows in the central Panamanian province of Herrera, known for its super high sugar content that's perfect for making top grade molasses. The 86 Co have set out to create a rum made in the style that inspired so many classic cocktails like the Daiquiri, El Presidente, Cuba Libre, and Mojito; a “Carta Blanca”. It's a style of rum that tastes like sugar cane and is supported by the flavours from the oak, not the other way around. This rum has been aged for three years in a combination of new un-charred American oak and used American Whisky barrels, and then blended with older rums for consistency before being carbon filtered. Distillation takes place in a 1922 continuous copper and brass still under the supervision of a former Minister of Cuban Rum, "Don Pancho" J.Fernandez.

    Tasting note: Clear. Attractive opening aroma offers suggestions of lime juice, unripe pineapple and vanilla custard. A silky entry leads into a svelte textured, light to medium bodied profile of custard and raw sugar to finish dry, balanced and with hints of citrus peel and dried banana accompanied by a mildly peppery kick.     Le Rocher is the latest Clairin from Romulus Bethel's distillery located in Pignon. Produced from syrup, rather than pure juice, the syrup is boiled in order to preserve all the aromas while retaining the character of three varieties of cane. A single pot still rum, this is bottled at ‘still proof’.

    Tasting note:[2017 vintage 46.5% Alc./Vol. tasted] Clear. Semi-sweet bouquet evokes candied pineapple, fruit pastries, toasted marshmallow with air contact adding grassy / caney scents and more.     Rum chasers on the hunt for hard-to-find libations will be excited to get their hands on Haitian “Clairin” (artisanal rhum). Like village Mezcal, these heirloom spirits have been produced by farmers, catering for their local communities before other markets. Almost unknown outside of Haiti where they're generally dismissed by the upper class as a peasant's drink, Clairins deliver the distinctive aromas and flavours of Agricole rum or Brazillian Cachaca – and more.

    Small craft distilleries known as 'guildives' are scattered throughout the country, often in the middle of the sugar cane fields. Villages like Cavaillon, Saint Michel De L'Attalaye and Barraderes each have their own version of Clairin emphasising their own 'terroir'. “The person with the most money in the neighborhood [often owns] the guildive, producing clairin with a donkey pressing the cane juice” explains Garcelle Menos, account manager for Boukman Clairin. “Most of the time, they’re a combination of column and pot stills, very small columns and very small pots.”

    Un-hybridised sugar cane varieties with names like “Cristalline”, “Hawaii” and “Madam Meuze” are grown for their amazing intensity of flavour, despite being low yielding and so ignored by large scale rum producers. Spontaneous fermentations are long, creating complex spirits, with every batch different from the last. Clairins are unaged, and unlike most rums which have no regulations regarding ‘flavour enhancements’, they have absolutely nothing added.

    Clairin Sajous is from the village of Saint Michel De L'Attalaye. Third generation of the family Sajous, Michel Sajous built the small distillery in 2004, located in the middle of a 30 hectare plantation growing different varieties of sugar cane among which is the rediscovered Cristalline. The cane is harvested and then transported to be distilled at the Chelo distillery under the direction of Michel.

    Tasting note: [2016 vintage 54.3% Alc./Vol. tasted] Crystal clear. Diverse yet surprisingly agreeable aromas are moderately caney, raw sugar-like then briney with yeasty scents evoking sour dough and fruit bread. Further air contact turns this grassy-sweet, finally leaning towards toasted marshmallow and beeswax. Amply spicy attack is oily, juicy, semi-sweet with a thrust of warming spirit and flavours of marzipan, dried herbs and white pepper. Ends salty, delectable, super long. Easily the most complex and remarkable white rum we've tasted to date. Outstanding.

    Classic Cocktail: Pina Colada

    The Piña Colada was originally just the juice of a fresh pineapple served either strained (colada) or unstrained (sin colar). One of the earliest references to a drink called a Piña Colada, containing Rum, Coconut and Pineapple was from the April 16, 1950 edition of the New York Times: "Drinks in the West Indies range from Martinique's famous rum punch to Cuba's piña colada (rum, pineapple and coconut milk). Key west has a variety of lime swizzles and punches, and Granadians use nutmeg in their rum drinks." It is a delicious, fragrant and mellow drink in itself -- rapidly shaken up with ice, sugar, lime and white rum in delicate proportions.

    The small, yet picturesque island of Mauritius shares a familiar history with many of the Caribbean isles, despite being half the globe away. The island was discovered by the Arabs, mapped by the Portuguese, then colonised by the Dutch, then the French until they surrendered to the the British who set out to capture the island during the Napoleonic wars.

    History tells us that European navies and armies were a thirsty lot who took their drink producing knowledge wherever they traveled. In Mauritius, sugar was widely available, and where there's sugar and a Navy, there's Rum!

    This is a clean and faultless white rum that offers an appealing fusion of styles; the French 'Agricole' influence is clear while the British mint and spices also make their presence felt. Green Island unfortunately lacks the intensity, power and depth required to justify this price point.

    Tasting Notes: Crystal clear in colour with crystal clear hue. A mild to aromatic nose delivers restrained aromas of cinnamon, stewed apple, vanilla icing and pastry.     Martinique, Guadeloupe and the adjacent island, Marie-Galante represent the very heart of Rhum Agricole. While they may lack the global footprint of molasses-based rum, rigorous regulations and strict adherence to high-quality production standards make it hard to find anything less than stellar examples out of Martinique and the lesser known Guadeloupe. Velier's Luca Gargano selected this expression from Papa Rouyo distillery (established 2021) located in Goyave in Guadeloupe, and bearing the nickname of Charles Albert Ruscade. Born in 1900, he was the son of a cane planter and became a farmer himself from 1920 until his death in 1980. It's from this heritage that the idea of creating a micro-distillery in his name was born in the minds of three cane planters: Papa Rouyo's great-grandson, Joris Galli, as well as master growers Tim Synésius and Jean-Marie Gobardha.

    According to Velier's classification, this distillate is Pure Single Agricole - that is, from a single distillery, distilled exclusively in pot stills. An ester content of 67.9 g/hlap has been achieved using a variety of cane called Matos (B80.0689) grown on the distillery's original (and historic) four hectare plot named 'Le Moule', situated on the limestone-clay soil of eastern Grande-Terre plateau. Synésius, who is one of the distillery’s “maîtres-canniers”, ensures the canes are hand-harvested before being crushed on-site. A long fermentation and a double distillation allow a particularly intense aromatic extraction, resulting in a pungent and multi-faceted agricole with vegetal notes alongside lime, olive, dried herbs and brine that will add a vivaciousness to cocktails. Nothing was added before bottling, only a reduction was done with Saint-Claude spring water. Distilled in 2021. 62% Alc./Vol. Very limited stocks.

Originally called 'Mount Gilboa', the estate is located in the northern parish of Saint Lucy and was renamed in 1801. There is evidence that there was distilling equipment in the region in 1663, so rum has probably been in production at Mt. Gay since. A tattered little deed confirms that rum production on the estate was well underway in 1703.

    Named after a total solar eclipse that occurred on Barbados in 1910. Mount Gay Eclipse Silver is distilled from both column and copper pot stills, and then triple filtered.

    This artisanal rum is handmade in the 'trapiche' of Jose Luis Carrera, located in the lush and cool tropical environment of northern Oaxaca Mexico. Jose Luis' family has been making aguardiente for at least three generations, with his father and grandfather teaching him the trade at a very young age. For the past 35 years, he has been producing an incredible, rich and fragrant spirit as one of many means to provide for his family.

    Carrera grows four different types of sugar cane on his 14 hectares: Caña Dulce, Caña Morada/Negra, Caña Dura, and Caña Amarilla/Criolla. His aguardiente batches are made from predominantly Caña Criolla, but inevitably have a blend of all four cane types. This is truly an artisanal operation; the cane is cut by hand and transported by donkey to the distillery, where the freshly pressed cane juice is fermented naturally in 1,100-litre pine vats, or tinas. A boiled 'mother' made from bark of the native Mesquite tree is used to kick-start fermentation--literally the only additive that touches the entire process.

    One of the things that really sets Carrera's rum apart from his neighbours and other white rum styles such as Rhum Agricole and Cachaça, is the use of rolling fermentation, which adds layers of funk and complexity. Jose Luis maintains a continuous fermentation, distilling only half of a single fermentation vat every morning and refilling it in the afternoon - the remaining active tepache inoculates the new liquid and the fermentation in the tina never stops!

    The result is a wonderfully complex rum, combining the funk and flavour of a top Rhum Agricole or Clairin with an earthy, bucolic sense of place. Green olive brine, Dijon mustard, white pepper, sour dough fruit bread and bittersweet grassy notes are just some of the descriptors that come to mind. In spite of its unique flavour punch, it's a brilliant mixing rum and, one thing is for sure -- your daiquiris will never be the same again! 54% Alc./Vol.

    At first thought, super premium Rum coming from the state of Jalisco, Mexico seems a strange concept. Jalisco is home to the town of Tequila, and is blessed with fertile volcanic soils suitable for the cultivation of Blue Agave - the succulent plant that forms the base of Tequila. One must the wonder, why Rum?

    Three elements form the foundation of Rum. Sugar, Distallation, Oak maturation. The better the quality of these elements, the better the outcome: There's no shortage of distilling knowledge in Jalisco, given the strong Tequila Industry that thrives there. There's reliable, good quality sources of American oak, which is also used for maturing Tequila. The real surprise is that sugar is Mexico's largest industry, employing approximately 2.5 million people across the nation. It turns out, that Sugarcane, like Blue Agave, thrives in these fertile volcanic soils.

    Porfidio Rum is produced from hand-harvested, individually selected sugarcane. The fields are located about an hour's drive from the distillery, which ensures that fresh cane arrives in peak condition. These fields are never burnt prior to harvest. The Rum is triple distilled, then aged for around three months in older American oak barrels then filtered to remove colour. The results simply speak for themselves.

    Tasting Note: An intense sniff! An extraordinarily complex nose that takes quite some time to unfold and to fully appreciate. The initial aroma reveals a strong white pepper character followed by notes of lemon meringue, sweet biscuit and lemon rind. Yet, you get the feeling that's not the entire story. Upon further nasal investigation, notes of salty green olive emerge. The palate is best described as explosive, with a full bodied, initially prickly entry, quite unlike anything we've ever experienced in White Rum before. Sweet green capsicum flavours are supported by a white pepper backbone and a slightly oily mouthfeel. Exceptionally long aftertaste of lolly spearmint leaves and spice. Given the beguiling complexity and changing character of this Rum it's one of the more difficult spirits to describe. Those of you who believe Wray and Nephew is the be all and end all of White rum, guess again. 45.0% Alc./Vol.

    The Matusalem Rum company was started by the Camp brothers in 1872 as a family affair. The "new" Cuban rum rapidly caught on in the world's markets.     Tasting note: This is a blend of three to four year old rums distilled in a combination of copper pot stills and a Coffey still. It was aged in American white oak casks that once contained Jim Beam, Jack Daniels and Buffalo Trace Bourbons. Crystal clear / flawless and brilliant. Opens with scents of fairy floss, vanilla and hints of marshmallow. Second pass finds the aroma marginally subdued with suggestions of baked citrus, dried banana and grass. Middle-weighted, medium dry flavours of dried banana, vanilla and pepper. Chalky, gently spiced finish. Complex and beautifully balanced. 43% Alc./Vol.

The significant pot still component combined with a high ABV makes for a robust, aromatic style that's one of the most assertive in its category.     Other reviews... A white blend of ex-column Foursquare and Hampden (ex-pot still, obviously) poured into an old Chartreuse V.E.P. look-alike bottle. A tribute, I suppose. Let’s see if we find some wormwood, or artemisia in there…  Colour: extremely pale white wine. Nose: the Jamaican seems to be having the upper hand, as we’re finding obvious notes of new wellies, Ardbeg (yep), some burnt sugar, and some kind of sweeter olive brine. Some shoe polish and burnt sugar too. Mouth: lemons, limoncello and lemon marmalade at first (nope that’s not kind of the same thing), then fresh ginger and pepper. It’s very spicy, much spicier than spiced rum, which is usually very sweet (don’t ask, the world of rum is full of contradictions). What’s troubling is that I’m also finding notes of aniseed-led herbal liqueur that, indeed, may hint at Chartreuse, but I’m sure that’s just my mind playing tricks on me. Finish: rather long, appropriately roughish, and pretty sweet, if not a tad sugary, quite curiously. But after all, Chartreuse is sweet too.     New and noteworthy for anyone chasing elusive high-strength Caribbean white rums is this 63% ABV offering from Worthy Park. Sticking to tradition, it blends three un-aged rums, all 100% copper pot-distilled from three different marques (WPEL, WPL and WPE). An alternative to Wray & Nephew's Overproof or Haitian Clairins, it guarantees to maximise flavour, 'funk' and mouthfeel. Recommended with a grapefruit soda for a tasty Summer cocktail.

    Tasting note: Clear. Piquant and spirity aromas suggesting green olive brine, sour dough, bitter cocoa and later hints of creamy soda. Extreme abv yet surprisingly relaxed, rounded and full with creamy textured flavours of brown sugar and vanilla cake frosting countered by a grassy / caney / peppery vibrancy. Finishes tingling, almost fruity (dried banana, mango), oily, medium long. First rate white rum. 63% Alc.Vol.

    Other reviews... Anyone buying this should not view this as a super charged Bacardi. The only similarity is the colour.     Notes from the producers... On the nose the banana notes dominate with a beautiful balance of other exotic fruit continuing through to the pallet supported with that classic grassy vegetal Jamaican funk.
