The crushed kernels of the fruit are included with the fruit juice before fermentation as they infuse the brandy with a fine, bitter tang. Baitz Kirsch is bottled for sale at high alcoholic strength (32% alc./vol.) and is unsweetened. It is clear and colourless with a sharp acid cherry nose. The palate is strong and penetrating, finishing with a sharp acid cherry flavour.

Tasted from a 20ml sample, the brandy pours brass gold. Swirling releases subtle scents of apple tart, quince paste and dustings of cinnamon.     As in Calvados, Brittany has been a traditional cider-making region for centuries. Not surprisingly, Fine Bretagne has been distilled on farms since the 1800s, mainly for local consumption and for fishermen leaving ports to seek cod off the coasts of Iceland and Newfoundland. Like its Normandy cousins, Fine Bretagne (also called Lambig), benefits from an AOC since 2015 which promotes the territory and the Breton know-how. Since 1992, Warenghem's Director, Gilles Leizour, has championed the region's emblematic fruit. Named after one of the last remaining Paimpolais schooners, his Cuvée Etoile is a delicate eau de vie produced from apples grown nearby the distillery. Gilles continues to use an old copper column still and matures in Limousin oak for a minimum of four years. The resulting brandy offers medium-sweet aromas of ripe pears, apple crumble and fresh cider, echoed by light bodied, graceful flavours of apple tart, green pear and cinnamon. Being more elegant and less oaky than most young Calvados, its cleansing cider-like character makes this an ideal Summer aperitif. 43% Alc./Vol.

    As young man who loved nature and its gifts, at the tender age of fifteen, Georg Weis brought the old family spirit recipes to light again and began to produce clear fruit brandies. Georg delivered his brandies with his motorcycle, and soon they were popular throughout the whole region. What Georg Weis had begun as a second source of income in the difficult times of WWI, soon became the main source of income for the family farm. When he came of age, Georg Weis had long known what his life's work would be: in 1924, the Elz Valley Distillery Georg Weis was officially founded. The traditional farmstead was transformed slowly but surely into a modern company.

    World War II interrupted this development. In 1940, Georg Weis was drafted. The copper pots of the distillery became a victim of the needs of the Wehrmacht, as well as the delivery truck. When Georg Weis returned home in 1945, he had to start over from scratch. With business acumen and daring, he managed to once again get the distillery going as a working enterprise. The complex was continuously enlarged and the circle of customers expanded. In the early seventies, Clemens Weis, the son of the founder, took over the business, and in 1996 he handed over the reins to the third generation of the family. Hansjörg and Christian Weis today run the company with the same "spirit" and passion that drove Georg Weis 85 years ago.

    The distinctive split log bottle used by the Weis company to package its spirits cuts a good figure in every house bar. It's rhomboid form is textured like wood and appears simultaneously natural and refined. The design actually refers back to an old tradition: At one time, wooden forms were used in making glass bottles, which gave the surface of each side of the bottle a special texture. Weis’s split log bottles are of course made with modern industrial techniques.     Recipe: Cherry Liqueur Strudel

    Ingredients

    250g (8oz) commercial puff pastry
    425g (1lb) can dark cherries
    2 tablespoons melted butter 
    1 cup soft white breadcrumbs 
    1 cup finely chopped walnuts 
    1 tablespoon grated lemon rind
    1 teaspoon ground cinnamon
    2 tablespoons Cherry Brandy or Maraschino Liqueur
    extra melted butter
    Icing sugar

    Preparation: Stone and halve cherries; drain. Roll out pastry on a well floured clean tea towel or plastic pastry sheet to measure 35cm x 50cm (14" x 20"). Work with longest edge of pastry to you. Brush pastry with melted butter to within 5cm (2") of edge. Combine melted butter and breadcrumbs and sprinkle over pastry. Mix walnuts, lemon rind, cinnamon and liqueur and place over buttered crumbs together with cherries. Brush edges with melted butter. Roll strudel carefully and place on greased baking tray. Brush over with melted butter. Bake in a hot oven 230'C (450'F) 10 minutes, then reduce to moderately hot 190'C (375'F) for a further 30 minutes or until golden brown. Brush with melted butter every 10 minutes.

    To Serve: Dust with icing sugar. May be served hot with fruit sauce or cold with whipped cream.

    Fruit Sauce: Add 1 tablespoon Cherry Brandy Liqueur to syrup from canned cherries. Heat and thicken with a little blended Arrowroot. Serve separately.

    Originally from China, arminiaca vulgaris travelled to the west with the Arabs via the Mediterranean coast. The Baitz liqueur version is made from fermented apricots and their kernels. Fruit is sourced from Europe, United States and Australia. Other natural fruit flavours and spices are added to produce a full flavoured, balanced product.

    Apricot Brandy, Peach Brandy etc. are all names for sweet liqueurs made from their respective fruits but often made in different ways. Indeed in modern times, fruit may not come into play at all – synthetic flavours and colourings may be partly or completely used to make satisfactory substitutes, however the quality of these products falls well short of their authentic fruit counterparts. Fruit Liqueurs are not made like brandies, however they may have an amount of brandy spirit added to them. (Strictly speaking, the word ‘brandy’ in relation to these products is a misnomer.)     The origins of the cherry can be traced back to Armenia and Persia. The liqueur, cherry brandy, is generally produced by blending the juices and extracts of various types of cherries with brandy and other spirits. (Strictly speaking, the word ‘brandy’ in relation to these products is a misnomer.) A distinction exists with the spirit cherry brandy which is produced by distilling the alcohol from fermented cherry juice

    The main cherries used in the production of Baitz Cherry Brandy Liqueur are the Morella, Dalmation and Guignolet. The resulting product is deep cherry-red in colour with an intense cherry fruit flavour. The flavour is further emphasised by the presence of flavour components derived from cracked cherry stones. The sugar and fruit-acid balance together beautifully.

    Baitz liqueurs have won more awards than any other maker in Australia. Their commitment to excellence and quality is un-equalled. The judges in the 19th International Wine & Spirits Show in the United Kingdom recognised this with Baitz Cherry Brandy awarded the 1988 Quest International Trophy for the Best Liqueur (Category Worldwide).     A limited edition for 2017, 'Renegade Barrel No.2' is made with Pierre Ferrand Cognac that's first aged in oak barrels and then matured in a barrel made from the wood of chestnut tree. Surprisingly, the practice of using chestnut barrels for cognac has been neglected since 1945, and was not included in subsequent Cognac AOC regulation - hence this nectar must be classed as an eau-de-vie de vin and not a cognac.

    Notes from the producer: The unique method of maturation in Chesnut wood barrel marvelously enhances the honeyed, candied fruits and floral notes present in this eau-de-vie. At 47% abv, its is complex, rich, flavourful and intense. Very limited stocks.

    Rudolf Jelinek is a joint stock company concerned with the production of alcoholic drinks, especially spirits and has an established tradition in Vizovice since the 16th century. The company itself was founded at the end of the last century in 1894. Its products are known in all corners of the Czech Republic with around 18% of total production exported to Slovakia and the USA, where the kosher spirits are particularly popular.

    Juniper Berries are normally assosciated with Gin. This traditional product from RUDOLF JELINEK a.s. has been continuously produced in Vizovice for over 100 years and under the brand name Slovacka borovicka 75 years. It acquires its specific taste and aroma thanks to repeated distilling of ripe black juniper berries in quality spirits. The juniper brandy settles for at least six months before bottling to enable the ingredients to blend and acquire a balance, but does not require mellowing in oak. Slovacka juniper brandy can be drunk neat, cooled, or added to all types of cocktails and is said to have a beneficial effect on digestion.

    Domaine Roulot are world famous for their exquisite wines from Meursault and surrounds, however lesser known is their expertise and passion for distilled spirits. The Roulot family have been making spirits since 1866, and Guy Roulot in particular had a love for the process of making fruit eau de vie. Guy's son Jean-Marc Roulot continues this tradition with production of a range of fruit liqueurs, along with eau de vie.

    La Poire du Roulot is a brandy of distilled Williams pears harvested at Orches in the Hautes Cotes de Beaune. After fermentation the pears were distilled in the family still, with the resulting brandy preserved in glass demijohns and stored for several years in the attics before bottling and release. Jean-Marc believes ageing with this temperature variation over the years in storage is crucial to the final result.

    Very pale straw colour with a pale green blush. Warm, lifted and blanco tequila-like at first with scents of green peppercorn, mustard and pickle alongside notes of sweet herbs and maraschino cherry. The palate is initially deceptively sweet and soft, building into an exceptionally concentrated profile that’s waxy, grapey and with some stewed plum evident. Slightly hot, but overall reasonably well balanced at this nuclear strength. Finish is bitter sweet. Dry, herbal, mildly fruity aftertaste followed by a trace of maraschino cherry. Definitely a spit or swallow affair rather than a contemplative drink. Holding it in the mouth for more than a few seconds intensifies the experience to the point of being painful - in fact, this taster's lips are now numb. 70% Alc./Vol.
