    Applewood take their Limoncello perhaps a tad seriously. Made from a safely guarded recipe - it employs two different types of lemons from South Australia's oldest citrus plantation in Lennane Orchards, Montacute Valley, Adelaide Hills - believed to be planted 150 years ago!

    ”Why is our Limoncello important?” Applewood explain, "The lemons are what one might call "UGLY". Yes, they are different sizes and kind of weird looking. Unfortunately, that meant that supermarkets did not want to buy them. So, after trying to sell these ugly little lemons for years, the growers decided to remove the 150 year old trees. To help preserve this historic orchard, Applewood Distillery put up our hands and promised to buy all whole crop to make our delicious Limoncello. It is our labour of love. Literally! We spend 12 hours hand peeling lemons from the orchard to produce this delicious drop. In fact, we have a family ritual of taking turns to peel a couple of buckets a day. Everyone chips in!"

    Tasting note: Slightly cloudy pale lime-green. Issues a fabulously pure, lifted citrus bouquet of lemon pith / peel with marginal loss in intensity after 2-3 minutes air contact. A superb 'creme-de-lemon' in the mouth with a sweet, unctuous, toothcoating texture and delicate acidity. Lemon meringue and citrus oils through the lengthy aftertaste. Outstanding. 20% Alc./Vol.

'Mando' is Unico’s second foray into sustainable spirits, which last saw them turn imperfect lemons into limoncello. Creators, Laura and Brendan Carter hand-peeled a tonne of imperfect dekopon mandarins, fruit that would otherwise been wasted for being too small or unsightly for consumers.     Made in France from hand picked, red and black raspberries (mûre), honey, vanilla, and Cognac. In the time of King Louis XIV the nobility of France entertained with feasts in their vast chateaux that were invariably concluded with liqueurs. It's in this tradition Chambord has been created- packaged in a spherical bottle with gold plastic lettered "belt". The bottle is modelled after a Globus Cruciger in order to reflect the liqueur's royal connection.

    The most obvious drink to create with Chambord is of course Kir Royale - that being a dash of liqueur at the bottom of a glass of champagne. However, alternatives abound. For example, an equal mix of Chambord & Cognac gently heated in a glass makes an ideal heart warmer while the Chambord Vodka Tonic (a dash of Chambord, ice, 30ml. Vodka, tonic & lime garnish) makes for a delicious refresher. Other common drinks made from Chambord include Chambord Daiquiri, Chambord Royal Spritzer, Little Purple Men, The Purple Hooter Shooter, Sour Grapes, Grape Crush, French Martini (which started the "cocktails as a Martini" craze) and the original Sex on the Beach. Needless to say the liqueur is more than acceptable drunk neat, although it lacks some of the viscosity and intensity of its Dijon counterparts and is lower in alcohol. (16.5% alc./vol.)

    As Chambord is made with all natural ingredients with no preservatives, it is best drunk within six months after opening.

    Cassis is the French word for blackcurrant. The blackcurrant itself is of Nordic origin. It was only towards the beginning of the eighteenth century that Europe embraced it, both as a garden plant and for its medicinal qualities which earnt it the description of “elixir de vie.” However, as far back as the sixteenth century monks from the famous Dijon region of France are recorded to have been growing blackcurrant bushes. The drink they made from it was offered as a universal cure-all for everything from snake bite to depression. While this is clearly fallacious, it is common knowledge that black currants are rich in vitamin C and the liqueurs made from them are enjoyable and healthy digestifs. It is most commonly produced by macerating the berries in grape brandy.

    Raspberries and other wild berries have a very low sugar content and fermentation alone produces practically no alcohol. They must therefore macerate in eau de vie for at least one month. Every 100 kg of fruits must macerate in 25 litres of eau de vie with an alcohol content of 50 % as laid down by legislation. Slight fermentation takes place during this period. The mixture is then distilled.

    This Creme de Cassis from G.E.Massenez (based in the the famous liqueur producing town of Dijon, capital of Burgundy) is of uncompromising quality. G.E.     Massenez Myrtille is produced from bilberries, AKA The European Blueberry. A bilberry is any of several species of low-growing shrubs in the genus Vaccinium (family Ericaceae), bearing edible berries. The fruit is smaller than that of the blueberry but with a fuller taste. Bilberries are darker in colour, and usually appear near black with a slight shade of purple. While the blueberry's fruit pulp is light green, the bilberry's is red or purple, heavily staining the fingers and lips of consumers eating the raw fruit.     The lychee is a rare sub tropical fruit originating in Southern China where the lychee is famed as "the King of Fruits". The lychee grows to approximately 3-4 centimetres in size, oval to rounded-heart shaped with a bumpy skin that is red in color. Once the skin is peeled, the crisp juicy flesh is white or pinkish, translucent and glossy like the consistency of a grape. Lychees have a sub-acid sweetness with a wonderful freshness.
