    This is the company's flagship product which Silvio Meletti began formulating in the mid 1800s. Following a period of trial and error, he identified plants from the Ascoli Piceno region, east of Rome as being of the highest quality. Here, heavy clay soils produce the most aromatic anise. Silvio captured these aromas via a traditional alembic still, however, he subsequently attributed the incredible flavour of this special Anisette primarily to his proprietary aging process. The Francoli Family has been running the distillery for over five generations. Opal Nera was created by the Francoli Distillery in 1989 and since its launch, success has spread to over thirty countries.     Created in 1932 by the twenty three year old entrepreneur, Paul Ricard, founder of what is today one of the biggest drink empires in the world – Pernod-Ricard. The Ricard company’s commitment to providing both trade partners and consumers with a consistently high-quality spirit starts with the selection of ingredients. Every year, a team of experts from Ricard travels to southern China where badian or star anis grows. They choose the best fruit during the harvest, carefully following the production process up to the first distillation. That takes place on site, the better to capture the badian’s rich flavour, which is turned into oil of aniseed. Liquorice is the other natural ingredient that brings out the anise flavour. Their search for the best plants often leads Ricard’s flavour specialists to the banks of the Euphrates. It’s vital to choose the plants with the most intense aromas. Only the roots are kept, which are dried in the sun and then cut up into sticks. The oil of aniseed and liquorice sticks are sent to Ricard’s flavour preparation centre in Bessan, a small village near Béziers in south west France. There, the oil of aniseed is purified and the liquorice undergoes a three-stage hot maceration process. The essential oils and blend of natural extracts of liquorice and aromatic Provençal plants are then delivered to the various production centres.     A colourless liqueur not to be confused with its French counterpart 'pastis' which is made from star anise as opposed to aniseed and has a slight yellow-brown tinge. Both were created as a response to the prohibition of absinthe in France around 1915. At that time, Absinthe producers were eager to create a drink that resembled the flavours and aromas of Absinthe, but without the wormwood, which was the cause of its being banned due to its supposed hallucinogenic effects.
    Anisette is sweeter than most anise-flavoured liqueurs such as the above mentioned. It also contains a lower alcohol content, usually around 25% versus the 40% +ABV.
    Popular in many countries in Europe, such as Italy, Portugal and Spain, it’s created by grinding more than a dozen different types of seed into a neutral spirit, which is then combined with a syrup and distilled until 25% alcohol has been reached.

    With a succession of medals under their belt, the award winning Australian Baitz company have introduced their adaptation of the French liqueur with a 23% ABV. Enjoy this liqueur served on ice or slightly chilled.

    Tasting note: The deep emerald green colour is a little overdone. Anise is evident but seems partially obscured by raw sugar / confectionary / liquorice bullet-like aromas, finally resolving into old liquorice strap after exposure. Third pass finds a further loss of focus and definition as the anise-like notes become barely discernible. A thick creamy entry follows through to a sweet, broad, flabby liquorice strap profile that fades flat, off balance and is fairly fleeting. 30% Alc./Vol.

    Sourced from an independent, family owned company established in 2012 on the coast of north Cornwall who handcraft Gin and Pastis in tiny runs (the old-fashioned way). A small batch approach sees about 300 bottles created in each run, sometimes much less - each ensuring maximum care and attention. Each bottle is hand filled, wax sealed, labelled and signed by the distiller.

    At the heart of the process lies a special, flame-fired, copper pot still (named 'Tamara'). Foraged gorse flowers from the Atlantic clifftops and fresh orange zest help to deliver the fresh, invigorating and unique aroma, which is then finished off with a touch of liquorice root for colour. The distillers comment, "we also add green aniseed and sweet fennel seeds from Turkey, along with star anise from China and liquorice root from Uzbekistan, to create the fragrant backbone...The citrus aromas come from the fresh fruit zests of sweet orange, lemon and grapefruit, from wherever they are in season. We also add angelica root from Poland, orris root from Morocco, green cardamom seeds from Guatemala, juniper berries from Kosovo and cinnamon from Madagascar for a depth of flavour and experience. A final addition is foraged gorse flowers from the nearby clifftops".

    This famous Spanish brand of anise, often considered along with several French anisettes to be the finest of its type, was founded by Vicente Bosch at the end of the last century. There is more than one colourful anecdote behind the inspiration for the brand. One reports that Bosch, while out on business, received a little monkey as a gift which he then selected as the trademark for the brand. Commenators have noted that the monkey's face appears to be based on Charles Darwin himself - a nod to the debate at that time about the theory of evolution. The diamond pattern on the bottle, often copied by other brands, was inspired by a perfume bottle Bosch bought in Paris as a present for his wife.
